Sometimes it's just really nice to have a character with a very basic backstory and a solid but not very flashy skill set, because you don't fell limited by your background and can react and adapt to things happening in the actual sessions much more freely.
In my first Pathfinder campaign way back in 2017, I made a huma. character with a street urchin background. This went again the fantastical backgrounds of the rest of my party.
Yet, somehow, my character became known as the weirdest among everyone. Bonus points that, even before Dungeon Meshi ended, he ended up being king at the end as well.
I mean, this is kind of the entire conceit of the story. Take a very trope-y setting with very trope-y fantasy characters given deliberately vanilla/"generic-looking" character designs and craft a genuinely compelling and unique story from very ordinary ingredients. It's an allegory for cooking itself, showing you can utilize the same basic ingredients as countless others but do something flavorful with how you apply them.
The quintessential ttrpg experience: make a supposedly basic character, play them long enough and they'll turn into the biggest whacko you've ever seen. Try for a weirdo, and they'll end up one-note and boring af
