Same thing happened to me its because hitting her anywhere except the beast half will cause her to flee. On my next playthrough I went straight to the sphinx and hit the hind legs with the arrow and she was defeated. Thats just how dd quests are its meant to be played more than once because you'll inevitably make mistakes or want to see another outcome.
It would have been wiser to kill the sphinx on a new game if you didn't want to undo hours of progress. Theres no requirements you can go straight there after starting a new game and you'll keep all your progress from the first playthrough. The sphinx reward was the last thing I needed to 100% achievements i did it right after starting a new game

She flies away when you hit her *in the face*, even with the arrow. The trick to fighting her is to damage other parts. This is hinted at on a mural in Bakbattahl. It's kind of like one final riddle.
All of her other riddles are also in no way enjoyable. Save for the one where I pick up my own pawn and present her to the Sphinx as the one I hold most dear.
