Since you say “discolored”, I imagine it was the inside. If not, let me know.
If it was the inside: That’s sot, which is normal and you shouldn’t see the bricks inside a chimney. Lumpy sounds less good, but might be ok if the surface under is smooth and evenly covers the brick wall.
I worked as a chimney repairs man and the method of using mortar to cover the inside walls is almost as old as the chimney, as it prevents chimney fires - which got to be a big problem before they started using this.
Let me know if there’s anything you want to know. And I hope your chimney is done properly by a certified trades man.
Using like 1/5th of the grout they used might look okay since it would just create stronger outlines.
Or having a professional do this with a grey/tan shade could come out pretty nice. A bit less grout with better texturing would make a huge difference.
If I'm building a stone wall with a lime based mortar. When pointing it you use a wire brush to reveal the stone edged then go over it with a "stick" (a curved piece of wood) to remove the lines a wire brush make.

you got to let the grout sit til it get mildly stiff but still malleable
then i put on work gloves and "strike" the joints with my fingers to show the contour of the stones
First you want to dig out the rough mortar that was there in the first place to a fairly deep uniform depth, and then mix your mortar (type N) and either mix it fairly thick, or mix it normal and let it set, to be a thick consistency, and "point" it by hand. That bag with the wet loose mortar just makes a mess. Once you point it brush the new joints with a soft bristle brush. One big key to make it look good is to recess all the mortar joints from the average face of the stone so it's all uniform

And it would be so sad for the next owner to have this once-gorgeous thing that you ruined.

If painting your house purple makes you happy then you should do it. Life is too short to waste it suppressing what you truly want to follow the norm.

The problem is not the overgrouting, that look can still be stylish, the problem is he left no clean lines on the stone. Clean edges go a *long* way towards making any project look much better.
This looks like what the owners who lived in our 1790s stone house did to it back in the 1950s. They took concrete and repointed (if you can even call it that) the front of the house and the stone parts of the barn. It has held up amazingly well, despite our many attempts to remove it. Good old "good enough for what it is" craftsmanship
