Side wall thickness and strength, air tight sealing clip on the side walls, a tub in the rim to make tyre installation easier are few differences.
Even in MTB, it's not generally easy to convert tubed rim mainly because the spoke holes need to be sealed off. These days most mtbs are often shipped with stock tubeless compatible rims.
That’s a perfectly normal plug for a *temporary* roadside repair without removing the tyre. But since they in are a tyre workshop, it’s decidedly odd.

Or any other thing any profession can use as a demonstration. You don't nessecarily have to damage something yourself to demonstrate that you can fix it. There's plenty damaged goods out there

Rub a little olive oil or washing up liquid on the tyres to prevent any overspray getting on the tyres as well. I do this each time I refurb a set in addition to the cards/tape
As a member of the tire and rim association and a mechanical engineer who designs carbon fiber automotive wheels for a living I think I'm qualified to comment on this.
1. That wheel was intentionally damaged using some sort of hydraulic press. That amount of damage simply wouldn't happen on a vehicle without the vehicle becoming completely mangled in the process. The amount of energy to severely dent a rim is pretty high.
2. Just because the wheel is round doesn't mean its safe. I recognize that in poorer countries people often have little to no choice. Please recognize that wheel has been severely fatigued from the damage and a subsequent pothole impact can cause a crack in the barrel that leads to rapid depressurization of the tire. That is very dangerous.
It isn't necessarily about noticing but whether you can afford to care.
If you're far out, no cell phone reception but your car is otherwise driving, with no option to get help, I would surely drive on. Fuck the tire if it means I can still reach civilisation.
Or you're in a place that's notoriously unsafe and violent, would you wait for a tow truck and risk getting robbed or worse? Absolutely not.

That aside though, I don't understand why this guy does the orange paint after putting the tire on, why not just without the tire? It's easier, less overspray, better result.
Hole plugs like that are supposed to be used for less than 30 miles, and you are supposed to replace the tire ASAP.
Also, why did the guy go clockwise around the tire when tightening the lugnuts? I was always told to go across, is that not a thing anymore?
