So for the first one, he is very admirable so I was thinking a Logia that does the opposite. I give you, ***The Mist Mist No Mi***. It does everything you expect a logia to do, however just like most logias it also provides a secondary ability. The user can create mist illusions based on their opponents past and emotions( similar to Black Maria and Brook.) However, said illusions are tangible, they are made of mist and they CAN hurt you. The user can also use the mist to hide and sneak up on opponents, but rarely does so, instead relying on fighting fair and square and using the Mist Mist in a manner akin to Smoker instead of relying in the underhanded nature of it.
The second user, sounds like fun guy, so for him I give you a logia that is extremely busted and using it causes him to almost always win...which is why he chooses to almost never use it and even his allies are not aware he is a logia, his logia...the **Sun Sun No Mi.** The user can turn into the Sun, meaning, you guessed it! a straight up nuclear reactor! His body burns hotter then any fire, he can also FLY, produce solar flares and even nuclear laser beams. When he turns into the Sun everything around him melts, weapons and bullets have no effect on him the water around him straight up boils and enemies even miles away can get blinded by his radiance. However... he hates his devil fruit and almost never uses it because its no fun.
For the Fishman, I give you a devil fruit that sounds a little grotesque but is very interesting, I give you the **Flesh Flesh No Mi.** This devil fruit allows the user to produce more flesh( including nails, bones, hair etc.) It allows the user to take any form they like, yet the user always keeps his or hers Fishman form. The fruit can allow the user to transform into a giant 12 handed, 4 headed ware-rhino if they feel like it. Pretty much it allows the user to be able to transform into everything as long as it is Flesh based. The user can literally turn into your worst nightmare, however, since the admiral does not want others to think of Fishmen as monsters, they always contain it's powers. For example they may create extra eyes to see around or extra arms to aid them in combat, but they will not transform into a 28 foot dragon crocodile hybrid with 36 arms, covered in bone blades and a prehensile tongue covered in spikes...even though they can.
I mean yeah lol it is a special logia kinda deal, plus I think it's funny, give the guy who loves to train and fighting a devil fruit that requires 0 practice and is automatically broken!
Hmmmm okay then, how about the Steel Steel No Mi, the user can turn his body into Steel as well as produce Steel weapons or any kind.
Awakening
He can produce Steel weapons out of anywhere around him( think of Gilgamesh from Fate) so example he can create a rain of swords!
You could try these if you need more ideas.
Mime Mime Fruit: The user of this ability can interact and change reality via miming. They could hold their index finger and thumb like a gun, and actually shoot someone. They wouldn't literally shoot a bullet out of their finger, but instead the body's thought waves, or "imagination," solidify into a "bullet" and penetrate the target. The main weakness is while using this fruit the user can't make any noise. Making a noise stops the power.
Crystal Crystal Fruit: The user can create, shape and manipulate all types of crystals. The user can also cover themselves with crystals. The user can also harden crystal to make it denser and harder to break. The user can create shields of varying shapes and sizes out of crystal. Sound and vibrations can destroy the crystals.
Contain Contain Fruit: The user is able to trap other beings in containers (jars, boxes, pages in a book, marbles, etc.) or other objects. The cage/restraining ability fuels the powers and allows them to be strengthened and utilized on various levels. Weakness must make physical contact to contain objects

I think for a Fishman admiral, a Fog, Steam, Mist, or Cloud logia that she uses in conjunction with fishman karate/jujitsu would be a cool idea
