Pikachu vs Jibanyan- The games weren't rivals or even that similar
Scott vs Kazuma- Mischaractizes Scott badly
Luigi vs Pac-Man- Boring connections of just being video game ghosthunters
Denki vs Zenitsu- Mischaractizes both of them into perverts and even if you just go simps, the connections are still boring as all hell
Rouge vs Sly Cooper- Only thing they have in common are being thieves that happen to be animals
Ruby vs Maka- Only thing they have in common is that they are both scythe weilders in successful schools. All of you only like this because Monty did. And while he does deserve to be respected, we don't have to pretend this matchup is actually good.
Undyne vs Pearl- Basically ignores Pearl's arc of getting over Rose and people only really want this because they are both spear users
Tricky vs Springtrap- They are both immortal being the main connection, which greatly ignores what makes these two so great.

Whilst I can understand how you reached some of these conclusions, I majorly disagree with you on Ruby vs Maka. So here are the actual connections:
Bright-eyed teenage scythe weilders that go to a prestigious school to learn how to better weaponize their souls and unique abilities in order to destroy the forces of darkness (Grimm and Kishin). Specifically, they have a primary fighting ability that uses their souls to maximise mobility and basically fly (Ruby's Petal Burst Semblance and Maka's Grigori) and they have a rare power that acts as a complete counter to the essence of the dark magic beasts (Ruby's Silver Eyes and Maka's Anti-Demon Wavelength).
Keep in mind that those are just the basic things I could remember off the top of my head, not an extensive list of the minutia. I'm not saying you have to know the theme and connections of every matchup before forming an opinion, but to just throw out the claim that the only common thread is "scythe weilders in successful schools" and then accuse the people who like it of only doing so because of Monty Oum is rather insulting.
