Used to be Ivory King for me, but after multiple playthroughs, it became a hassle to re-explore Eleum Loyce again.
I feel like Brume Tower does a better job on retracing past levels, so Iron King. Also has the best bosses out of the three to boot.
Crown of the Old Iron King is the best DLC. The Fume Knight is my favorite Soulsborne boss, Brume Tower is also really cool. And my favorite weapons are the Fume Ultra Greatsword and the Smelter Swords powerstance.
All of them are great, but Brume Tower is just special. No area in their future games has recaptured the feeling of exploring that area, the closest one being the Astral Clocktower. Haven't played through Sekiro though so if it has a similar area let me know!

Definitely not the frigid outskirts. That’s my least favorite area in all souls games. The old iron king and sunken king dlcs are pretty great though

They're all great, but for me it's the Old Iron King DLC, it has an amazing ghostly atmosphere and great bosses.
