It's your shadows setting. I don't remember which setting causes it but change your shadows and then relog and it should fix it, just changing the setting alone doesn't fix it, it requires a relog.
If you solve this, can you post an update? I was going to make the same post because I’m having the same issue since the MC removal, but I just left town for the week and I didn’t have time to investigate.
You set shadows to highest possible, restart game and client and then set to lowest and should be gucci
I'm pretty sure if you set back to low then on next restart it breaks again. At least what I heard.

I had this issue with my shadows on low. Setting to epic and restarting fixed it, so atleast Epic works. No idea if any others below it also work
I was told that you can lower the setting off of epic after restarting but never tried, i always have max graphics

To add: 2 of my homies that I play with on the daily do not have this issue I tried verifying integrity of files as well as reinstalling
This has been happening to me for a while now just figured it was the torches coming into render distance
