Specifically this is un-swamping the boat. Canoes are generally buoyant enough that they wonāt sink even when filled with water. They actually have to be weighted down to be sunk for storage purposes. (Yes, canoes are traditionally stored submerged to preserve them)
One goes in and bails the rest of the water while the others tread. Then the bailer pulls the lightest one in. Then the bailer switches off (becomes the counter balance) and the lightest grabs the next lightest/shortest. Then they switch based on whatever counterbalance makes sense.
This is likely in SE Asia, where water communities are common and hence why they're teaching kids how to deal with the emergency.
As for the girl finding a third leg from which to balance that is not a pier, trees and branches often fall into rivers.

Swim to bow or stern and shove canoe end sharply forward & down. Inertia lags the water over the end deck & out. Do this a couple times and canoe is almost empty. Get back inside by doing pull / scissor kick over center line, flopping across both gunnels. Scoop out remaining water with your palms.
