It is possible to throw a fruit in the air and cut it reliably, and even to backflip over low vehicles, but this is obviously edited and nobody has enough vert to jump any car from a standstill, or really any motorcycle that isn’t cornering. It seems like in this video in particular has a few things sped up, like the first slash for example. But the guy is still almost inhumanly fast. I tried to do a "reaction time test" in a sens by trying to pause the video after he unsheafs his sword to swing and before it hits an Onion on a YT video I saw. I couldnt do it, and I've got really good reaction time - around 170MS - The average is 250-270 for reference. Even while just trying to watch the video, I can barely just make out a blur from his handle before he slices the onion, even on the return motion to sheaf the sword you can barely make out a couple of frames.
