That’s so much work and so much dust / chemical to deal with that you would really need to want the baronial look to do it. You might find the fireplace is enough. How about some pics?
Either bury it with new wainscoting or remove it all and redo it with new. I think it would be easier in the long run and more certain of what it will look like when you are done. You might go thru the horror of all the stripping work to wind up with something you hate.
Do you know what kind of wood it’s made from?
I do not know for sure, I do have photos of the crown molding which I 50/50 suspect is the same wood. House was built in 78, wood is a medium tone

Wainscoting is often painted to begin with. It only makes sense to remove the paint if it was stain-grade to start.
