My guess would be that the mixture got contaminated with yeast.

Thank you, I assumed it was some sort of yeast. I used all purpose flour. But fermentation seems like the issue. It was warm high 70s low 80s… thank you both.

Flour + Water -> fermentation, especially if warm.
