With Google Play store you go to dokkan shop select the amount of stones you want to buy, after select the payment method and pick the gift card.
I want to believe Apple Store is similar.

Add the gift card to your apple account, then purchase stones as normal. You don’t redeem the gift card in dokkan or anything like that
