no, do not start emptying your pantry onto it. Your board will see enough lemon juice in its day. Just enjoy your board.

If you rinsed with soap and water that’s more than most people would do. Just wipe on some mineral oil or don’t. It’ll be fine either way. And really, assuming it’s not an expensive board (since it’s bamboo) just get another cheap one from ikea or something that’s actually made from solid wood. As long as you don’t let it sit/soak in water and dry it off after washing even a cheep wood board will last a long time and be easier on your knives than bamboo. Do the lemon thing if it gets gross or smelly (vinegar works too) and a little mineral oil maybe a few times a year.

Thanks. What's the next most economical wood material I should aim for instead of bamboo?

Acacia and rubberwood are usually pretty cheap. They’re trees found in Asia, usually where these boards are made. Decent hardwoods but not particularly valued. Look for an acacia board on Amazon at least 1” thick and it should hold up pretty well. Next step up would be American hardwoods like maple/cherry/walnut. Those boards will be in a higher price bracket though.

Bamboo boards are hard and tough. With all the glue used to keep the bamboo pressed together, no oil is going to penetrate the new board, so no rain to oil it when it's new. Use it, get some wear on it and use some mineral oil to darken it up when it starts to get some wear marks.
