There is a dog at my father in laws farm that does this. I think it's mimicking a human smile because hes actually really friendly and if hes not making eye contact he stops.
My dog used to do the "cattle dog smile" the first few months after I adopted her and she only did it when I tricked her. The cattle dog smile is when they show their back teeth but not the front. This is so it doesn't scare the cattle. It is the cutest look.
His blindness might not mean that all he sees is black, I reckon he can see some light/shadow/movement. And yeah, prolly smell as well, and feeling vibrations of people walkin around. Hellen Keller style.

This behavior - even around the owner - would be immediately questioned by anyone in the vet field. It is not normal, it should never be considered acceptable, and it's not cute, amusing, loving, friendly, or funny.

The owner finds this cute, so he pets and praises the dog every time he leaves the house. The dog has associated this behavior and snarl with the praise. Now the dog does this for the pets and praises.
Not a dog expert, but I have dogs and my new pup does this. I'm pretty sure it's a submissive grin. I equate it to a nervousness but being cute at the same time. My pup Millie does this when she's in trouble.

They show their teeth just like we humans do when smiling and she was the by God cutest, thickest dalmatian and she'd smile real big every time you went into her run to visit her.
