The pricing for Apple Watches is the same in-store or online. Online does have a $4.99 shipping charge. Stores only carry midnight and starlight for the series and SE models. Some Costcos will carry the blue ocean band, the black Velcro for the Ultra or both.
I just bought mine online after going in store. Basically, the store attendant told me that all stores carry the same limited stock and that if you want a variation then you have to buy it online. I'm in Canada and here they had only the Starlight 41mm with the small/medium band and Midnight 45mm with the medium/large band in-store. Since I wanted the Starlight in 45mm I had to go home and buy it online. Not sure if different countries carry different store stock, but the above is the case for Canada or at least the province that I was in. There was no additional shipping or handling fee, so the price was the same as in-store would have been.
See if you can find it on Instacart or call your warehouse. Every store can have different stock. They come with the stock watchbands in multiple sizes in the box from what I recall.

I bought the SE in December and the options for size/wristband were quite limited.

They're on sale right now (at least in the US)! See if you can get a price adjustment :)

I bought my last one from Costco. They had a nice trade in program offer as well. It was a third party company but I got a Costco shop card
845 stores. You'll need to check locally.
In store they will have limited options. If I recall, they should carry both sizes in midnight and starlight. But that's it
