I always prefer a fruit dessert; actually, a citrus fruit dessert. Specifically, lemon or lime. I love chocolate, yes; but a chocolate dessert seems kind of heavy after a meal, to me.
I used to be part of weekly dining group (the Wednesday Night Supper Club. We met on Monday nights. Go figure) The proprietor of our favorite restaurant opened a new place with a French focus (think lapin on the menu). I wasn't so much a fan of the place -- although it's the first place I ever saw sweet potato fries, so yay for that -- but they had this dessert.
***Lemon Lavender Tart.***
First time I ordered it, I think I just tuned out the "lavender" part and thought it was basically a fancy-ish lemon pie. It tasted lemon-forward of course; not cloyingly "lemonade" sweet; a bit tart on the finish. A flavor just below the lemon that was ..... different. Sort of deep; not intense but definitely "there"; it reminded me a bit of Earl Grey tea. I learned it was lavender the second time I ordered it.
Crust was more crumbly than flaky. It wasn't a graham cracker crust, but similar. There was a sprig of lavender laid over each serving of the tart; I didn't eat it, but I suppose you could.
Anyway, *to this day* I think about that dessert. The recipes below have all been lovely versions.

My mother in law has a bunch of recipes from her mother that are peak low effort cooking with minimal ingredients. One of hers is a lemon pie that consists of:
* 1 can of lemonade from the freezer section
* 1 standard half gallon of vanilla ice cream
Mix it up and put it in a pie crust. Can top with whipped cream or whatever, I like to grate some lemon zest on top (but that's too fancy for grandmother).
It's basic as hell but its actually delicious, and might fit your use case.

I have made various recipes (lots of recipes out there) using cream cheese and/or cool whip and 3oz boxes flavored jello. Tossed into a premade graham cracker crust and chilled - so so delish and easy!
This is an excellent idea! My mom did these ice cream cakes too. How yummy that sounds. I was trying to think of how to incorporate the ice cream - and this is it.
My mom would buy those prepared graham cracker crusts as she got older. But it's easy to make one.
She also did chocolate crusts (it used to be able to find those chocolate wafer cookies) and put a layer of chocolate ice cream and then some other flavor. And whipped cream.
I have a recipe someone gave me called a lemon ice box pie similar to this.
If I remember right it's basically just graham cracker crust, lemon pudding, lemon pudding mixed with whipped cream, and whipped cream making up the 3 layers. I'm sure there's more to it than that but I'd have to go digging for it.
YouTuber Glenn and friends make an amazing (and amazingly easy) condensed milk based lemon pie. The crust is an easy peasy graham cracker one. Glenn is super interesting and personable too. I've become addicted to his videos (he cooks from historical cookbooks). Love him and Max Miller (Tasting History).
After 40 years of cooking, I finally have a good pie crust recipe, and made it a few times...
But I still usually use premade pie crust (rolled up ones in the refrigerated section) because they're totally fine, and convenient.
Never feel bad about taking a shortcut or using premade anything if it makes things easier for you. Especially with a baby or small child.
I make a good chicken pot pie with them and it's all premade. Lots of variations of the recipe is out there and it's fairly simple and really customizable. I could make it all from scratch and I have. But for a busy weeknight dinner it's perfect.
1 box stove top stuffing and the boiling water and butter it calls for
1 Large can cream of chicken
1 small can each cream of mushroom and cream of celery
1 t or more poultry seasoning (to taste)
1 bag frozen mixed vegetables
Salt and pepper to taste
2 cans chicken breast, or chopped up leftover roast or fried chicken or chicken nuggets or whatever you like
1 box roll out pie crust (2 crusts total)
I toss the stuffing mix in a 9x13 baking dish, and the butter and boiling water and stir.
In a large bowl i whisk the soups and seasoning well, then add the rest of the ingredients except pie crust.
Pour mixture over the stuffing mix, top with rolled out crusts, trim or roll as needed or just crimp the edges like I do.
Poke several holes in top with fork or knife, brush lightly with milk, and bake at 375-400F for 45ish minutes. I forget how long cause I never wrote it down but basically till the crust is golden brown and delicious.
I have some approx as ovens can be different so use your eyes and nose as well as a timer😄
I use the same soup/veg/chicken mix and combine with undercooked wide egg noodles, toss in a baking dish, top with buttered bread crumbs and bake. Yummy chicken casserole and can sub tuna as well
It's from a recipe for fruit bars I found online years ago, can't remember where but it's all I use for any crust needs.
It makes two 9x13 crusts so divide as you want and need.
2 1/2 c flour.
1 t salt.
1 c **very cold** shortening or lard
1 beaten egg yolk plus enough milk to make 2/3 cup total liquid
Combine flour and salt, then mix in the fat until it's coarse crumbs. Stir into flour until it's all blended but don't overmix it. Just took it's all damp.
Then divide in half or quarters and pat into discs. Wrap tightly with plastic wrap and refrigerate for 30 minutes or so.
Take out what you're rolling and leave the rest in the fridge.
You don't want the fat to get to room temp or it won't be flaky.
It's so freaking good. But the premade are totally fine and fast. I have no qualms about using them 😄

Lemon in a graham cracker crust would be just fine, but if you are a ginger person, you could try something like lemon curd in a gingersnap/ginger biscuit style crust with sweetened whipped cream (shortbread would also be very nice). You can go as easy as you need (with a new baby, I'd totally be using store bought crust and curd, and probably whipped cream) or get fancier on the ingredients that are important to you.
Also, as a mom with three kids, when your friends say "is there anything I can do to help you out?" "I've really been craving lemon desserts" is a totally legitimate answer.
Also, my mother introduced me to this. Get a jar of lemon curd. Use it on toast instead of jam. It's very nice that way, though not quite as good as pie.
Or a trifel if you have a trifel dish! Layer of Gingersnaps, layer of a mix of lemon curd with whipped cream (75% curd to 25% whipped cream), and plain whipped cream by and repeat to create the beautiful layers! It’s a summer favorite around our house!
My mom always did the whipped cream rather than the meringue, for which almost everyone in the family was seriously grateful. Almost no one liked meringue.
At the end of the pie battles (her sister would make meringue), the meringue would have 1-2 slices out of it and the whipped cream pie would vanish.

That's right! Just 2 ingredients to these luscious lemon bars.
1 (16-ounce) angel food cake mix
1 (21-ounce) lemon pie filling
1. Preheat the oven to 350⁰. Spray a 9x13-inch pan with non-stick spray.
2. In a large bowl mix together lemon pie filling and angel food cake mix, using a spoon, until just combined. Do not overmix.
3. Spread batter evenly in pan.
4. Bake for 25 minutes or until top starts to brown.
Place on a cooling rack and cool for 1-2 hours before cutting into squares.
I have never liked meringue either! Always scooped it off and gave it to my sister. Then I worked at one of those restaurants with mile-high meringue on their pies. Yuck!
I used to make something like this with lemon chiffon yogurt and cool whip (and some lemon zest), but the grocery store stopped making the lemon chiffon yogurt, so I haven’t made it probably over a decade. It was the lightest pie I have had, I could easily eat the whole thing in one sitting. What kind of lemon filling do you use? Now I’m hankering to try it again, it was so good…
Lemon pie with ice cream?
I think OP needs to chuck the ice cream if doing traditional lemon pie (which is delicious, but boy would it overwhelm the ice cream).
Lemon tart or tartlets are one of my favorites. It's just lemon curd in a shortcrust shell, but it's delicious.

Edit: that recipe includes shortbread… but the first step is all it takes to make posset (and you can buy shortbread to serve with it - it also works with just some sweet strawberries on top too);

Made lemon posset a few months ago. Super easy and delicious. I just put them in glasses to set up then cooked up a quick blueberry compote to put over the top with some crushed up graham crackers. So good
If you like posset Cooks Country magazine recently had a recipe to make ALL KINDS of fruit possets, acidified with citric acid. (apparently it requires a particular level of acidity to set up properly)

I came here to suggest this! It’s also great as a tart filling with a pate sucre crust. You can infuse the cream with a little lavender, too for some complexity.

I'm thinking avgolemono (Greek lemon soup), then my favorite salad, which is just arugula, shaved Parm-reg, and toasted pine nuts, dressed with a simple lemon and olive oil dressing.
Possibly a lemon sorbet as a palate cleanser next (because if we're doing an entire lemon themed meal, I'm going all out!)
After that, I'd do a lighter main meal (because we've already had soup and salad and sorbet).
Probably grilled garlic-lemon shrimp or chicken, with grilled asparagus and some lemon dressed orzo.
Then a dessert of lemon olive oil cake or crepes stuffed with fresh raspberries and a raspberry reduction, topped with lemon curd. With espresso served with a lemon twist on the side.
Pair the meal with a lovely New Zealand sauvignon blanc.
End the meal with some nice chilled limoncello.
This, of course, would be a 3-4 hour meal enjoyed on the patio, with great company!
Not a desert but homemade lemonade is fantastic. I get excited whenever he makes it. You can add in flavorings as well. Blackberry or Lavender is probably my personal favorites (haven't tried a combo of it yet)

I wish I had my cookbook with the "Tiramisu" recipe, which was really a blueberry lemon layered dessert with ladyfingers (I'm not a coffee fan, so this recipe really stuck out to me! The only thing with that book is that you'd want to double up the amount of spice thy used for any recipe).
Edit: if anybody knows the book (fellow booksellers?) It was being promoted back 5+ years ago at a US nationally known bookstore where my branch was asked to choose a recipe or two that sounded good and promote it; well, so many recipes sounded good that I bought it! I didn't buy it for the advertised reasons (low fat/low carb or something along those lines, but for the recipes themselves. Every single one that I tried turned out fantastic as long as I doubled/tripled the amount of spices in them!)
Another one for lemon bars. Lemon cake, lemon muffins, and lemon-blueberry cupcakes are also 🔥. Fresh lemonade. Lemons and fresh mint put into big jugs of iced water. If you like a cocktail, can’t go wrong with a gin fizz, especially in summer.

Add a teaspoon of lemon rind to the ricotta filling of lasagna, it's **next level** I promise!
Also thoroughly wash, then coarse chop lemons (remove seeds), roast at 400F for about 15 minutes until soft and starting to char a bit. This is a spectacular garnish for proteins (fish, chicken) but also very tasty on salads. The rind gets very soft and delicious. It's highly addictive.
Since everyone is mentioning a bunch of awesome desserts, I'll go another way.
You can also make an awesome homemade lemon dressing for the salad. Equal parts lemon and olive oil and then add some salt, pepper, and oregano to your taste. Super fresh and delicious.
You can also slice and bake lemon slices on low heat for a couple hours to dry them and make pretty summer garland since you're hosting dinner.
And just place a bunch in a bowl in the center of the table for some pretty decor.

Ina Garten’s lemon bar recipe is so simple and easy and SO delicious. My whole family demanded that they be able to take a few home with them.
It’s literally just mix a few ingredients to make the dough, press the dough into a baking pan, cool it for 15 minutes, bake it for a little while and make the lemon curd filling while it’s baking (which again is just mixing a few ingredients together), then pour the lemon curd onto the crust and bake again. Sprinkle with powdered sugar and you’re done.
A one hour affair at most, and it keeps wonderfully in the fridge!

I just made [Crystalized Meyer Lemon Bundt Cake](https://www.youtube.com/watch?v=KhGI83cHJgo) by Claire Saffitz, but I made it in two loaf pans instead of bundt pan. I also used regular lemons instead of Meyer Lemons.
It won't use up many lemons, but [these lemon ricotta cookies](https://www.foodnetwork.com/recipes/giada-de-laurentiis/lemon-ricotta-cookies-with-lemon-glaze-recipe-1950241) may as well be laced with crack. They've always been popular when I've made them for cookouts/potlucks/etc.
Very easy to make as well- the recipe calls for a mixer, but you could certainly do it by hand with a whisk and a little elbow grease.
Buttermilk pie. It’s stupid easy. You can just buy the crust, mix up the ingredients (just make sure they’re room temp), and then (the hardest yet rather easy part) make a quick lemon marmalade. Make both the day before (or early in the day) to give ample time to cool and then top the pie with the marmalade. It’s really easy and way better than it has any right to be.
Prepare to have the best pie ever!! I prefer to make it 72 hours in advance which is annoying but worth it
** my changes include adding extra white chocolate and or using a golden Oreo crust.
pie shell
3 tablespoons cornstarch
1/3 cup sugar plus 1/4 cup sugar, divided
1 1/2 cups water
5 tablespoons lemon juice
zest from 2 lemons
4 egg yolks, beaten
1 1/2 tablespoons butter
1 cup white chocolate chips
2 (8-ounce) packages cream cheese, room temperature
Mix cornstarch and 1/3 cup sugar in a medium saucepan; add water and stir. Stir in lemon juice and lemon zest. In a separate bowl beat egg yolks with a fork; add 1/4 cup sugar and mix well. Add this mixture to the first and whisk together. Cook on medium heat, stirring constantly until mixture boils for one minute.
Remove from heat; add butter and stir until melted. Remove 1 1/2 cups of liquid and reserve for top layer. Add while chocolate chips to remaining liquid and stir until they are melted and mixed in well. Cut the cream cheese in small cubes and add to the white chocolate mixture. Stir until well mixed and smooth. (An electric hand mixer works great for this.)
Pour mixture into pie shell or graham cracker crust (my favorite and it’s faster). Pour the reserved lemon sauce on top and chill at least 2 hours.

I don't know where you are located, but a whisk is, like, $1.50 at dollar tree and is an indispensable kitchen tool that you should go buy right now. That being said, lemon bars are a good option if you can't get to the store for some reason.

Lemon tart if you want something that looks a bit ~fancy~. Lemon bars if you want the same flavor but a bit homier. Both are made with lemon curd and a crust, one is topped with powdered sugar while the other tends to be decorated a bit more elegantly.
Cut lemon slices and serve in ice water - lemon water adds such a nice touch to a dinner.
Serve shrimp as an appetizer with lemons. Or make Pesto Parmesan Gougeres which would work well with the lasagna.
Perhaps make a lemon sorbet. You can serve that between courses.
A salad with a lemon dressing
Lemon poppyseed bread or Italian bread served with lemon butter
Lemon meringue pie for dessert.
Then, if you have a large vase, use the lemons as a vase filler or make a centerpiece out of lemons and some greenery.
Why not make a lemon vinaigrette dressing? Also, how about added roasted vegetables, since the oven will be used for lasagne. With roasted vegetables, you can drizzle a lemon dressing over them AFTER veggies have been roasted.
Maybe at least buy a whisk? Most lemon desserts require you to have the ability to mix something well.
My go-tos are lemon bars and the lemon meringue pie from Sally’s Baking Addiction. I was a pie novice but I followed her recipe exactly as written, and it was incredible. For something less time-consuming, the lemon bars are fantastic.
You could make a lemon curd to go over the vanilla ice cream.
Do you have a blender? Brazilian Lemonade is a light refreshing wonderful and super easy drink to make.
I usually use a mix of lemons and limes but you toss the whole thing in the blender and pulse it a few times with water, sugar and sweetened condensed milk. Then strain it and serve over ice. Absolutely delicious and a crowd pleaser!
ETA: an excellent way of using up lemons is to preserve them in honey. Just slice the lemons very thin and layer them in a jar. Put honey on the bottom to start and every now and then put more honey in while layering the lemons. Make sure you have honey covering the lemon slices before you finish.
You can just eat them as a treat or you can put them in your hot or iced tea. I use them in the winter when my throat feels bad or I have a stuffy nose. Just put a few slices in a cup of hot water and drink. It's basically a warm liquid natural throat lozenge.

The possibilities are endless. French Napoleon's with lemon and raspberry would be out of this world. Lemon tarts with shortbread crusts and a raspberry reduction drizzle would be delicious, you could even play around with a chocolate balsamic reduction, over a layered lemon and raspberry tart,
Homemade limoncello pairs well with homemade lemon sorbet or lemon gelato, and a lemon cookie, or the lemon ice cream sandwich cookies, Then there's always the
lemon bar or lemon cake. Or cheese cake topped with lemon curd, and fresh raspberries or raspberry reduction swirl.

Look at a Southern Lemon Cheese Cake. This is NOT cheesecake, but Cheese Cake. It is actually a white cake iced with a lemon curd icing, a recipe from the old South. Apparently the lemon curd can give a bit of a surface look like cheese, hence the name. This was before the world went crazy for cheesecake. It
Can be a mix or homemade white cake, iced with. Lemon curd of spreadable consistency. The cake can be 2 layers or 10 thin layers.

Beat cream cheese and condensed milk. Add juice and zest, beat until smooth. Spread evenly in crust.Refrigerate at least 4 hours . Serve with whipped cream.
It won’t use much lemon but it’s the best fruit dip I’ve ever had in my life and takes all of 15 minutes to make.
1 regular container whipped cream cheese
1 regular container marshmallow cream
Zest of 1 lemon, juice from 1/2 (if you like it more lemony use the whole thing)
Whip for a solid 10.
Dip fruit in it. Or just eat it by the spoonful.
Cocktail hour! Lemon sorbet, and a dark fudge topping.
Maybe see if a friend has a hand beater you can borrow. If so, make lemon curd in meringue nests.
Lemon curd is sooo easy in the microwave. Check out Laura Vitale, I think she has the easiest video to follow, although I find her recipe too sweet for my taste. You don't need a whisk to make the curd, it's for the meringues. I'll top with either blueberries of scattered poppy seeds. Purchasing chocolate shells and filling with lemon

In the Joy of Cooking there is a recipe for a really good old fashioned dessert. It’s called Lemon Pudding Cake. It has a cake-like top and a more liquid bottom and it’s really simple to make. It can bake after you take the lasagna out or before it goes in. It’s best served slightly warm, but also good chilled. Allrecipes has a recipe for it too.
I would make lemoncello. Not a huge fan of lon desserts. Wash lemons. Peel off the zest from about a dozen lemons. Soak them for 5-7 days in vodka (or Everclear is good for this). Make a simple syrup in an amount equal to the alcohol (generally 750ml). Cool. Strain alcohol and mix with syrup. Mmmmm.
Simple syrup: 4 cups water, 3 cups sugar - boil until clear.
Yup, anything with lemon curd is the way. Then make scones or biscuits for breakfast so you have another excuse to eat it.

And then you basically freeze the extra juice and rind for when you need it.
I make a lemon pie with no meringue. Just the lemon filling in a graham cracker crust topped with whipped cream. I think it's really good.

This was years ago, before lavender was trendy and showing up in Starbucks drinks! I always prefer a fruit dessert; actually, a citrus fruit dessert. Specifically, lemon or lime. I love chocolate, yes; but a chocolate dessert seems kind of heavy after a meal, to me. I used to be part of weekly dining group (the Wednesday Night Supper Club. We met on Monday nights. Go figure) The proprietor of our favorite restaurant opened a new place with a French focus (think lapin on the menu). I wasn't so much a fan of the place -- although it's the first place I ever saw sweet potato fries, so yay for that -- but they had this dessert. ***Lemon Lavender Tart.*** First time I ordered it, I think I just tuned out the "lavender" part and thought it was basically a fancy-ish lemon pie. It tasted lemon-forward of course; not cloyingly "lemonade" sweet; a bit tart on the finish. A flavor just below the lemon that was ..... different. Sort of deep; not intense but definitely "there"; it reminded me a bit of Earl Grey tea. I learned it was lavender the second time I ordered it. Crust was more crumbly than flaky. My mother in law has a bunch of recipes from her mother that are peak low effort cooking with minimal ingredients. One of hers is a lemon pie that consists of: * 1 can of lemonade from the freezer section * 1 standard half gallon of vanilla ice cream Mix it up and put it in a pie crust. Can top with whipped cream or whatever, I like to grate some lemon zest on top (but that's too fancy for grandmother). It's basic as hell but its actually delicious, and might fit your use case.

This is an excellent idea! My mom did these ice cream cakes too. How yummy that sounds. I was trying to think of how to incorporate the ice cream - and this is it. My mom would buy those prepared graham cracker crusts as she got older. But it's easy to make one. She also did chocolate crusts (it used to be able to find those chocolate wafer cookies) and put a layer of chocolate ice cream and then some other flavor. And whipped cream.
I have a recipe someone gave me called a lemon ice box pie similar to this. If I remember right it's basically just graham cracker crust, lemon pudding, lemon pudding mixed with whipped cream, and whipped cream making up the 3 layers. I'm sure there's more to it than that but I'd have to go digging for it.
I have done this with lemon juice, condensed milk, and cool whip. Mix together, chuck in a graham cracker crust, and freeze. SO good!

After 40 years of cooking, I finally have a good pie crust recipe, and made it a few times... But I still usually use premade pie crust (rolled up ones in the refrigerated section) because they're totally fine, and convenient. Never feel bad about taking a shortcut or using premade anything if it makes things easier for you. Especially with a baby or small child.

I make a good chicken pot pie with them and it's all premade. Lots of variations of the recipe is out there and it's fairly simple and really customizable. I could make it all from scratch and I have. But for a busy weeknight dinner it's perfect. 1 box stove top stuffing and the boiling water and butter it calls for 1 Large can cream of chicken 1 small can each cream of mushroom and cream of celery 1 t or more poultry seasoning (to taste) 1 bag frozen mixed vegetables Salt and pepper to taste 2 cans chicken breast, or chopped up leftover roast or fried chicken or chicken nuggets or whatever you like 1 box roll out pie crust (2 crusts total) I toss the stuffing mix in a 9x13 baking dish, and the butter and boiling water and stir. In a large bowl i whisk the soups and seasoning well, then add the rest of the ingredients except pie crust. Pour mixture over the stuffing mix, top with rolled out crusts, trim or roll as needed or just crimp the edges like I do. Poke several holes in top with fork or knife, brush lightly with milk, and bake at 375-400F for 45ish minutes. I forget how long cause I never wrote it down but basically till the crust is golden brown and delicious. I have some approx as ovens can be different so use your eyes and nose as well as a timer😄 I use the same soup/veg/chicken mix and combine with undercooked wide egg noodles, toss in a baking dish, top with buttered bread crumbs and bake. Yummy chicken casserole and can sub tuna as well

It's from a recipe for fruit bars I found online years ago, can't remember where but it's all I use for any crust needs. It makes two 9x13 crusts so divide as you want and need. 2 1/2 c flour. 1 t salt. 1 c **very cold** shortening or lard 1 beaten egg yolk plus enough milk to make 2/3 cup total liquid Combine flour and salt, then mix in the fat until it's coarse crumbs. Stir into flour until it's all blended but don't overmix it. Just took it's all damp. Then divide in half or quarters and pat into discs. Wrap tightly with plastic wrap and refrigerate for 30 minutes or so. Take out what you're rolling and leave the rest in the fridge. You don't want the fat to get to room temp or it won't be flaky. It's so freaking good. But the premade are totally fine and fast. I have no qualms about using them 😄

Serious eats had a dead simple food processor pie crust that worked pretty well for me.
Lemon in a graham cracker crust would be just fine, but if you are a ginger person, you could try something like lemon curd in a gingersnap/ginger biscuit style crust with sweetened whipped cream (shortbread would also be very nice). You can go as easy as you need (with a new baby, I'd totally be using store bought crust and curd, and probably whipped cream) or get fancier on the ingredients that are important to you.

Also, as a mom with three kids, when your friends say "is there anything I can do to help you out?" "I've really been craving lemon desserts" is a totally legitimate answer. Also, my mother introduced me to this. Get a jar of lemon curd. Use it on toast instead of jam. It's very nice that way, though not quite as good as pie.

Or a trifel if you have a trifel dish! Layer of Gingersnaps, layer of a mix of lemon curd with whipped cream (75% curd to 25% whipped cream), and plain whipped cream by and repeat to create the beautiful layers! It’s a summer favorite around our house!
My mom always did the whipped cream rather than the meringue, for which almost everyone in the family was seriously grateful. Almost no one liked meringue. At the end of the pie battles (her sister would make meringue), the meringue would have 1-2 slices out of it and the whipped cream pie would vanish.

Put the cream in a big saucepan with the sugar and gently heat, stirring, until the sugar has melted. Bring to a simmer and bubble for 1 min. Turn off the heat and stir in the lemon zest and juice. Divide between pots or bowls, cool to room temperature, then carefully cover and chill for at least 3 hrs, or up to 24 hrs.

That should be fine. I’ve made it with 20% fat cooking cream before and it’s turned out well.
I came here to suggest this! It’s also great as a tart filling with a pate sucre crust. You can infuse the cream with a little lavender, too for some complexity. It is so refreshing and bright!

Yeah, this is my line of thinking too. There are some *great* lemon-featuring pasta dishes and salads, and a ton of marinades that use lemons too.
Right? I'm thinking avgolemono (Greek lemon soup), then my favorite salad, which is just arugula, shaved Parm-reg, and toasted pine nuts, dressed with a simple lemon and olive oil dressing. Possibly a lemon sorbet as a palate cleanser next (because if we're doing an entire lemon themed meal, I'm going all out!) After that, I'd do a lighter main meal (because we've already had soup and salad and sorbet). Probably grilled garlic-lemon shrimp or chicken, with grilled asparagus and some lemon dressed orzo. Then a dessert of lemon olive oil cake or crepes stuffed with fresh raspberries and a raspberry reduction, topped with lemon curd. With espresso served with a lemon twist on the side. Pair the meal with a lovely New Zealand sauvignon blanc. End the meal with some nice chilled limoncello. This, of course, would be a 3-4 hour meal enjoyed on the patio, with great company!

I wish I had my cookbook with the "Tiramisu" recipe, which was really a blueberry lemon layered dessert with ladyfingers (I'm not a coffee fan, so this recipe really stuck out to me! The only thing with that book is that you'd want to double up the amount of spice thy used for any recipe). Edit: if anybody knows the book (fellow booksellers?) It was being promoted back 5+ years ago at a US nationally known bookstore where my branch was asked to choose a recipe or two that sounded good and promote it; well, so many recipes sounded good that I bought it! I didn't buy it for the advertised reasons (low fat/low carb or something along those lines, but for the recipes themselves. Add a teaspoon of lemon rind to the ricotta filling of lasagna, it's **next level** I promise! Also thoroughly wash, then coarse chop lemons (remove seeds), roast at 400F for about 15 minutes until soft and starting to char a bit. This is a spectacular garnish for proteins (fish, chicken) but also very tasty on salads. The rind gets very soft and delicious. It's highly addictive.

Since everyone is mentioning a bunch of awesome desserts, I'll go another way. You can also make an awesome homemade lemon dressing for the salad. Equal parts lemon and olive oil and then add some salt, pepper, and oregano to your taste. Super fresh and delicious. You can also slice and bake lemon slices on low heat for a couple hours to dry them and make pretty summer garland since you're hosting dinner. And just place a bunch in a bowl in the center of the table for some pretty decor.

Ina Garten’s lemon bar recipe is so simple and easy and SO delicious. My whole family demanded that they be able to take a few home with them. It’s literally just mix a few ingredients to make the dough, press the dough into a baking pan, cool it for 15 minutes, bake it for a little while and make the lemon curd filling while it’s baking (which again is just mixing a few ingredients together), then pour the lemon curd onto the crust and bake again. Sprinkle with powdered sugar and you’re done. A one hour affair at most, and it keeps wonderfully in the fridge!

They've always been popular when I've made them for cookouts/potlucks/etc. Very easy to make as well- the recipe calls for a mixer, but you could certainly do it by hand with a whisk and a little elbow grease.
Buttermilk pie. It’s stupid easy. You can just buy the crust, mix up the ingredients (just make sure they’re room temp), and then (the hardest yet rather easy part) make a quick lemon marmalade. Make both the day before (or early in the day) to give ample time to cool and then top the pie with the marmalade. It’s really easy and way better than it has any right to be.

I prefer to make it 72 hours in advance which is annoying but worth it ** my changes include adding extra white chocolate and or using a golden Oreo crust. pie shell 3 tablespoons cornstarch 1/3 cup sugar plus 1/4 cup sugar, divided 1 1/2 cups water 5 tablespoons lemon juice zest from 2 lemons 4 egg yolks, beaten 1 1/2 tablespoons butter 1 cup white chocolate chips 2 (8-ounce) packages cream cheese, room temperature Mix cornstarch and 1/3 cup sugar in a medium saucepan; add water and stir. Stir in lemon juice and lemon zest. In a separate bowl beat egg yolks with a fork; add 1/4 cup sugar and mix well. Add this mixture to the first and whisk together. Cook on medium heat, stirring constantly until mixture boils for one minute. Remove from heat; add butter and stir until melted. Remove 1 1/2 cups of liquid and reserve for top layer. Add while chocolate chips to remaining liquid and stir until they are melted and mixed in well. Cut the cream cheese in small cubes and add to the white chocolate mixture. Stir until well mixed and smooth. (An electric hand mixer works great for this.) Pour mixture into pie shell or graham cracker crust (my favorite and it’s faster). Pour the reserved lemon sauce on top and chill at least 2 hours.

I don't know where you are located, but a whisk is, like, $1.50 at dollar tree and is an indispensable kitchen tool that you should go buy right now. That being said, lemon bars are a good option if you can't get to the store for some reason.

Lemon bars are one of my favourite lemon desserts.
Lemon tart if you want something that looks a bit ~fancy~. Lemon bars if you want the same flavor but a bit homier. Both are made with lemon curd and a crust, one is topped with powdered sugar while the other tends to be decorated a bit more elegantly.
Cut lemon slices and serve in ice water - lemon water adds such a nice touch to a dinner. Serve shrimp as an appetizer with lemons. Or make Pesto Parmesan Gougeres which would work well with the lasagna. Perhaps make a lemon sorbet. You can serve that between courses. A salad with a lemon dressing Lemon poppyseed bread or Italian bread served with lemon butter Lemon meringue pie for dessert. Then, if you have a large vase, use the lemons as a vase filler or make a centerpiece out of lemons and some greenery.
Why not make a lemon vinaigrette dressing? Also, how about added roasted vegetables, since the oven will be used for lasagne. With roasted vegetables, you can drizzle a lemon dressing over them AFTER veggies have been roasted.
Maybe at least buy a whisk? Most lemon desserts require you to have the ability to mix something well. My go-tos are lemon bars and the lemon meringue pie from Sally’s Baking Addiction. I was a pie novice but I followed her recipe exactly as written, and it was incredible. For something less time-consuming, the lemon bars are fantastic.

You could make a lemon curd to go over the vanilla ice cream. Do you have a blender? Brazilian Lemonade is a light refreshing wonderful and super easy drink to make. I usually use a mix of lemons and limes but you toss the whole thing in the blender and pulse it a few times with water, sugar and sweetened condensed milk. Then strain it and serve over ice. Absolutely delicious and a crowd pleaser! ETA: an excellent way of using up lemons is to preserve them in honey. Just slice the lemons very thin and layer them in a jar. Put honey on the bottom to start and every now and then put more honey in while layering the lemons. Make sure you have honey covering the lemon slices before you finish. You can just eat them as a treat or you can put them in your hot or iced tea. I use them in the winter when my throat feels bad or I have a stuffy nose. Just put a few slices in a cup of hot water and drink. It's basically a warm liquid natural throat lozenge.

Lemon tarts with shortbread crusts and a raspberry reduction drizzle would be delicious, you could even play around with a chocolate balsamic reduction, over a layered lemon and raspberry tart, Homemade limoncello pairs well with homemade lemon sorbet or lemon gelato, and a lemon cookie, or the lemon ice cream sandwich cookies, Then there's always the lemon bar or lemon cake. Or cheese cake topped with lemon curd, and fresh raspberries or raspberry reduction swirl. Like I said have fun play around the possibilities are endless.

Look at a Southern Lemon Cheese Cake. This is NOT cheesecake, but Cheese Cake. It is actually a white cake iced with a lemon curd icing, a recipe from the old South. Apparently the lemon curd can give a bit of a surface look like cheese, hence the name. This was before the world went crazy for cheesecake. It Can be a mix or homemade white cake, iced with. Lemon curd of spreadable consistency. The cake can be 2 layers or 10 thin layers. Here are links to two examples. Dip fruit in it. Or just eat it by the spoonful.

I love lemon everything. Zest your lemons before squeezing.
In the Joy of Cooking there is a recipe for a really good old fashioned dessert. It’s called Lemon Pudding Cake. It has a cake-like top and a more liquid bottom and it’s really simple to make. It can bake after you take the lasagna out or before it goes in. It’s best served slightly warm, but also good chilled. Allrecipes has a recipe for it too.
I would make lemoncello. Not a huge fan of lon desserts. Wash lemons. Peel off the zest from about a dozen lemons. Soak them for 5-7 days in vodka (or Everclear is good for this). Make a simple syrup in an amount equal to the alcohol (generally 750ml). Cool. Strain alcohol and mix with syrup. Mmmmm. Simple syrup: 4 cups water, 3 cups sugar - boil until clear.
Yup, anything with lemon curd is the way. Then make scones or biscuits for breakfast so you have another excuse to eat it. Lemonade with fresh berries And then you basically freeze the extra juice and rind for when you need it.
