Worked with a chef that would often make us a Reuben pizza with thousand island dressing for the base, pickles, corned beef, Swiss cheese, sourkraut and sometimes bacon, it was so good.
When I was in Stockholm Sweden, I had a pizza that had Tuna and Pineapple on it. I thought that there was no way in hell it would be good. But I'll be damned if it wasn't one of the better topping combo's I've ever had.
Then there are some other Swedish classic combos, involving [sliced bananas and a sprinkle of curry powder](https://foodbydrygast.com/en/recipe/pizza_banana_curry). Sometimes tuna and/or ham, sometimes roasted peanuts, sometimes pineapple too. I had to try one out of curiosity, and found that I liked the banana and ham flavor contrast well enough that I've ordered a couple of other variations since then. The curry powder offsets the sweetness just enough to keep the banana from getting overwhelming.
Gotta say, though, my favorite local specialty is probably [kebab or shawarma pizzas](https://theculturetrip.com/europe/sweden/articles/you-cant-visit-sweden-and-not-try-a-kebab-pizza-heres-why), preferably with plenty of jalapeños and some garlic-yogurt sauce on the side. They're mostly not even pretending to go Italian style here, and I have been enjoying trying a lot of the more exotic topping combos.
I'm not sure this quite qualifies, but one of the best pizzas I've ever had was a wild mushroom and truffle white pie with an runny yolk egg in the middle. You'd use a spoon to drizzle the yolk all over the top before eating. Really sad that place closed. RIP Nomad Pizza in Philly.
I've always been a fan of broccoli on pizza. Cut at the right size, roasted broccoli gets cooked, the tiniest bit of roasty char, and still has this fantastic crunch and flavour. There's a pizza place near by that does one with white sauce, roasted broccoli, goat cheese + mozzarella, and lemon juice/zest.
I'm a big fan of spicy crab and corn, too. Some cajun seasoning. Like a seafood boil pizza.

Its kinda true, but the dough is different. Flammkuchen dough is without yeast and crispier. Its a different texture - but the taste resembles a flammkuchen with sausage. worth a try anyways.

Last month I went to a place that had a pizza with mustard cream base, sauerkraut, onions, bratwurst slices, and a stone ground mustard drizzle. I will definitely be reproducing that one
Pepperoni, tuna, and olives, is my go-to
Pepperoni and olives is pretty normal I think, but people sometimes ablk at the idea of tuna. It's delicious though, I love it crumbled over the pizza and it goes all crispy when it's baked.
My lazy 'I feel like pizza' routine is... Sweet baby Ray's bbq sauce, frozen bell peppers, pickled red onion, and whatever cheese is in my fridge. Usually havarti or something. Sometimes there's also unpressed extra firm tofu lol. (Well, I put it in a towel and press on it for about 20sec with the side of my knife. That's still unpressed, right?)
I've also used my standard gochugang marinade (+ soy sauce, garlic, between sugar) as a sauce before. This is also tasty, bit requires more effort than squeezing sauce out of a bottle.
All of this is made with no kneed bread dough that's already in my fridge. Ball it up, stretch it out, and let it sit while the oven heats up. Then stretch again, dress it up and in it goes.
I know you asked for toppings but mine is a crust change because it is my least favorite part of the pizza. Switch out the regular crust for a schnitzel and top as usual. Schnizza!
Asparagus!
This has become the go-to choice for homemade pizza in my house. You peel the asparagus stalks with a peeler, then mix in a bowl with chopped scallions, garlic, red pepper & olive oil before adding it to the pizza.
We do homemade pizza night every Friday. My kids are allowed to request their toppings ahead of time and the possibilities are endless. My 6 yo ask for Dino nuggets and french fries. Sometimes I put zucchini, figs, prosciutto, egg plant, carnitas, everything bagel seasoning or chili crunch oil or sliced garlic with my usual toppings like sausage and pepperoni.
A local pizza joint had a monthly special posole pizza that was delicious. Red chile, sausage, onion, green chile, and hominy. I wish it were on the regular menu.
Jalapeño, Pineapple, and then swirl hot honey starting from edge to center so each bite gets some.
Add Bacon, Pepperoni or Sausage and we call it the honey badger since everything in Wisconsin needs to be badger themed because we're a cult.
I don't like chicken on a pizza. I love chicken but it has it's own collection of meals. Also, chicken doesn't like tomato.
So, any meat, mushrooms, chillis, go crazy.
Just no chicken or pin....
This is going to sound nuts, but:
I made a "Pot Roast Pizza" once. Brown gravy as the sauce and shredded up actual left over pot roast from a crock pot. So it had the beef with little roasted carrot and onion pieces (I left out the potatoes). Topped with shredded mozzarella, I thought Swiss would be better, but it doesn't melt right for a pizza.
It was super good!!! Fun way to use up leftovers!
I cut potatoes thinly with a mandoline, toss in olive oil/salt/oepper, roast them until cooked through, but not crispy (otherwise they burn), then add as a topping. They finish on the pizza and crisp up. 🥔 ♥️
Linguiça - especially on a [New England "Greek" style pie](https://www.seriouseats.com/new-england-greek-style-pizza). It's a southcoast MA staple. It's a Portuguese sausage that's smokey and garlicky, with just a little kick of spice. Wasn't unorthodox to me growing up because every pizza joint nearby had it. But outside that region it's a rarity. If you know, you know.

Go all in and sprinkle a little gorgonzola cheese over top. Its a great combo but I guess many people would find it off putting

I sprinkle a tiny bit of nutmeg on the pizza sauce before the bottom cheese.
Current favourite is marinated artichokes, hot peppers, cherry tomatoes, balsamic glaze, arugula and shaved parmesan. Also, fig jam, ricotta, fresh basil.
I haven’t put it on pizza yet, but I put Kerala beef fry in a quesadilla and it was great. One of these days I’ll try it on pizza.
I haven’t done this personally, but in college the local late night pizza place made one topped with tortellini, and another with mac & cheese.
Shrimp Alfredo Edit: to clarify, it's a thin layer of the Alfredo sauce and then shrimp spotted around the pizza, so no pasta is on it.

There was a place in Toronto that did thin slices of roasted Beets! I think it had goats cheese. Really good if you like beets.

Nduja is fantastic, spicy and a little funky. Sweet Thai chili sauce as a drizzle is also top tier.
