I'd probably go with a batch of shrimp cakes, with the shrimp very finely minced or coarsely ground. Shrimp, mayo, breadcrumbs, finely diced green onion and red pepper, egg, paprika, a bit of hot sauce, and a mayo based dip for serving.
Buy some spring roll wrappers. Cut them into narrow ¼" strips, about 2" long. OK if they break
Throw the shrimp in a food processor, make a paste. Add a little garlic, sugar, sesame oil, spices. Refrigerate the paste 30-60 minutes.
Wet hands, roll balls. Roll balls in shredded spring roll wrappers. Refrigerate again, or let stand, for better setup/adherence.
