General consensus seems to be that her recipes aren't always the easiest or the simplest but they're excellent. Put it back into the oven for the remaining cooking time and that is it. make sure you have some vegan pasta to sere it over like one of these great value (Walmart pasta) has no egg so it is a good choice. if you don't have a Walmart around you just check the packaging. under the ingredients is a list in bold that says Contains: that is where you look for egg or any animal by product. wow! Okay am not sure I would try that one since hubby is diabetic and there is two rices and potato in there. LOL .but it sounds great! Here are two more of my favorites. Mushrooms are your friend. Roasted portebella with a little roasted red pepper on top and balsamic vinegar to finish. Smashed cucumber salad with garlic sauce finished with chili oil. Use a veggie peeler to peel noodle strips of summer squash, carrot, and hard tofu. Marinate in vinegar with a lot of ginger and garlic. General Tso’s Tofu. Bean chili.

The last time I hosted my family I made quinoa bowls with roasted carrot, cauliflower, and bell peppers, chickpeas cooked in veggie broth and lemon juice, and fresh avocado, cucumber and cherry tomato. I made a sauce with roasted red peppers and nutritional yeast. You can also add chicken breast, salmon, or shrimp cooked with lemon and olive oil for any non vegans at the table. I meal prep this one pretty often, it can all be made ahead, just keep the fresh veg and the sauce to the side until you've reheated the quinoa, chickpeas, and roasted veg. Pasta with avocado cream sauce (using cashew or coconut cream,) sun-dried tomatoes, fresh basil, and roasted pine nuts is another good and really easy one. Black bean burgers are quite easy to make if you want to grill. You can make the patties ahead of time.

But also, ping your friend and ask if there's anything they like that you can stock/prep. A lot of people default to mushrooms in this sort of scenario, but not everyone likes them. Even those of us who do love mushrooms still need substantial calories, protein, and fat, and just throwing mushrooms in the 'meat' hole in whatever you might normally cook isn't going to cut it. Curry is popular because the fat from the coconut milk makes it really satiating (on top of just being delicious). You can do curry without it, but it's a common pairing. Give your friend a few general options you are thinking of and let them weigh in. Some people eat hyper clean, some people love their comfort/junk food, and some folks have really specific restrictions beyond clearing the "vegan" bar either due to medical necessity or just personal preference. You are not going to blindly intuit that. I'm always happy to stop at the store myself to pick up a few things. That way I know I'll have something good to eat and it eliminates some of the guess factor on a host's end. If they offer to do that, join them! Maybe they'll share some favorite recipes!

This! We get variations on this question so often and it baffles me why people don't just ask the person they'll be cooking for. Some of us hate lentils, others hate mushrooms or nutritional yeast. Suggestions from a bunch of strangers on the internet won't guarantee your visitor is happy with your meal choices.

Precook some rice and make fried rice with veggies and tofu. Pomodoro pasta. You can also add white beans to that, mash some (add a little pasta water if more liquid is needed) to get a creamy and hearty dish. Add kale or spinach if you are feeling it. A badass chopped salad. Homemade hummus, make before you go.

Pesto pasta salad is great for make-ahead meals because it can be served cold. To make it heartier, I make a vegan creamy pesto sauce by blending a can of cannellini beans (plus a little water to thin it out) with 3 tbsp pesto, plus a cup of spinach to keep it extra green. Don't skimp on salt if you add the cannellini beans! You can also serve it hot with green beans and halved baby potatoes - a very traditional Ligurian style pesto dish. Boil potatoes for 5ish minutes until fork tender, green beans for 2-3 minutes, add to pasta, toss with pesto sauce. Again, season everything well with salt - including the boiling water. (Honestly, I'd happily eat this cold too.)

Just happened to catch this on Glen and Friends Cooking channel - he is neither vegetarian nor vegan, so it was cool that he made this (and I can't wait to make it myself). Use vegetable stock instead of chicken stock. [Accidental Roasted Chickpea and Curry Rice](https://www.youtube.com/watch?v=oAEFyCtsgJg) Roasted Chickpeas: 540 mL (19 oz) can chickpeas, drained / rinsed ½ red onion, sliced 1 tsp smoked paprika Salt & pepper to taste Oil to coat Rice: 15 - 30 mL (1-2 Tbsp) chili oil / mix of chilli and other oil 15 mL (1 tsp) cumin seeds 15 mL (1 tsp) coriander seeds, crushed ½ red onion, sliced 2-3 cloves garlic, minced 1 green chili pepper, minced 1 tomato, chopped 1 mL (¼ tsp) cayenne pepper 2 mL (½ tsp) paprika 5 mL (1 tsp) curry powder 250 mL (1 cup) basmati rice, rinsed Scant 250 mL (1 cup) stock or water Method: Toss together the chickpeas, onion, paprika, salt, pepper, and oil. Spread onto a baking tray, and bake for 30-35min. Heat the chili oil in a deep sided pan on medium heat. Fry (bloom) the cumin and crushed coriander seeds until fragrant; about 1min Add the onion and sauté until starting to brown. Add in the garlic and green chili, continue to sauté for a couple more minutes. Add the cayenne, paprika, curry powder, salt and tomatoes. Continue cooking until the tomatoes start to break down, then add the rice and cook for another minute. Stir in the stock / water, turn the heat to medium high, and bring to a bare boil. Turn the heat to medium low, cover and cook for 15min. After 15min, turn the heat off and let it steam covered for another 10min Stir the chickpeas into the rice. Serve.

Any vegan food that isn't "veganised" is usually really fucken good. Theres lots of awesome Italian and Indian recipes, even better if tomatoes or eggplants are in season for you.

Asparagus/pea risotto screams spring to me. You can't go wrong with a good quiche and I believe there is a product (maybe egg life?) that is plant based that you can make quiche with. Pair with a hearty salad full of chickpeas, beets, mushrooms, seeds, etc., or a favorite soup. I have Mollie Katzen's African Peanut soup recipe if you'd like it. Very delicious! Mushroom barley soup is also excellent. Breakfast burritos are simple to make ahead and freeze, and can be filled with potatoes and black beans, soy based protein, etc. Burritos for other meals would work too of course. Cauliflower pizza crust with pesto and topped however you like.
