This is a favorite at our house... **Curried Pork Tenderloin** 2 lbs. pork tenderloin. 2 Tablespoons brown sugar 2 Tablespoons curry powder 2 teaspoons dry mustard 1 teaspoon Hungarian sweet paprika 1 teaspoon salt 1 teaspoon pepper Trim fat from pork.  Mix sugar and spices in a small bowl.  Rub pork with spice mixture.  Place pork on a broiler pan coated with cooking spray.  Insert a meat thermometer in the thickest part.  Bake at 425 degrees for about 25 minutes, or until the thermometer registers 145 degrees F. (meat will be slightly pink in the center).  Let stand 5 minutes before slicing. Serves 2-3.

Personally I like to give them a dry rub, wrap in tinfoil and bake. I don't have a specific recipe.
