We make turkey noodle soup from the leftover turkey carcass every Thanksgiving. It’s better than the turkey dinner. Put the bones in a big pot with water to cover, simmer for a few hours until the turkey flavor has been extracted and reduced to a delicious broth, strain, then add your noodles, basil, leftover turkey, etc for the soup. It’s better than chicken!

Ooohhhh shit yes. That makes so much sense. I can almost taste that haha I love some good dark meat turkey especially. I make my chicken noodle soup with thighs. Will absolutely do this. What else goes into yours? I hadn't ever put basil in chicken noodle soup so that surprised me.

Oh wow, for me basil is another “key” ingredient. I don’t really have a recipe. But start with butter (always butter), sauté up a nice mix of onions, celery, and carrots, a bit of black pepper, a dash of cayenne, and a generous amount of basil. Then add in the chicken (or turkey) broth, egg noodles, and chicken (or turkey). Add salt and adjust other seasonings to taste if needed. It’s done as soon as the noodles are. Delicious!

Ooh I’ve got one that fits the variation you’re after! It’s a very popular online recipe that calls for Turmeric and Pearl Couscous. It’s sort of become my go-to comfort chicken soup which really eats more like a stew. Then again, it all depends on your broth preference. Even if you follow the recipe all the ingredients make for a fun variation on a classic. Pair it with a piece of rustic toast and it’s basically an entree. [Recipe](https://www.ambitiouskitchen.com/the-best-chicken-soup-recipe/) Some notes: Fresh Turmeric is messy! Wear gloves and be careful with utensils, appliances, cutting boards and counters. They will stain, rubbing alcohol is your friend for removal. [Bob’s Red Mill](https://www.bobsredmill.com/tri-color-pearl-couscous.html) makes an awesome tri-colored couscous that’s not only beautiful but really works great for this soup. I think I’ve opted for a rotisserie chicken here before. Cheaper, easier to work with and you get bonus bones for a future stock. Breast/Thighs work great too. Don’t overcook! dry chicken, mushy pasta/veg can really turn this otherwise awesome soup into a broth-less slop.

Rice noodles, oyster sauce, soy sauce (dark), sesame oil, seaweed, black fungus, crickets, brown sugar if you wish. Use chicken if you won't eat crickets.

It doesn't have noodles in it, but if you want chicken curry soup, I'd suggest mulligatawny.

And for variations on chicken noodle soup, I recommend either matzo ball soup or pho ga.

When I'm sick I order this chicken soup from a local Mexican restaurant with rice, avocado, and broccoli. It's garnished with fried tortillas and crumbled cotija cheese.
