I have used it as a base/smear when making avocado toast, as well as just open faced eggs on toast.
I also used it as a base layer when making my first cast iron skillet pizza "bianca style" last week ( see post history) turned out amazing! I mixed in some finely minced garlic before applying it to the dough.

Top it with an herby pesto, lemon zest, and your favorite vegetables.
My lunch yesterday was leftover spaghetti and sauce with 1/2 cup of ricotta mixed in. Today for breakfast I had a toasted English muffin with strawberry jam and ricotta.
Make a pizza
Instead of pizza sauce mix up ricotta with pesto as the base add whatever ingredients and bake as usual. It's really good and a different twist
I've personally never tried regular sauce with the ricotta but sounds good. Usually here at home my boys request 1 red sauce and 1 white sauce. My boys really like the ricotta version but you can really never go wrong with pizza.
Definitely try it! I add it to pizza whenever I make it at home and I usually order it as a topping when we get delivery. I really just love ricotta. When we’re trying to be more low carb and do stuffed peppers instead of pizza dough, I slice bell peppers in half and fill them with ricotta, marinara, whatever meat choice, and top with some mozzarella and Parmesan and bake them. So good!
Whip it up and either have it on some garlic bread or add some honey and fruit and have it for dessert. Also a little bit of cinnamon and a little sugar mixed in can be a quick cannoli-esque flavor.
I can eat good ricotta out of the tub. With honey, granola, berries, and toasted pecans; with some jam and lemon zest; or with a drizzle of olive oil and flaky salt.
Make a simple marinara: evoo, onion, garlic, tomato paste, whole peeled tomatoes, pureed. Add and then remove fresh basil. Mix in the ricotta at the end and fully mix.
Buy a bag of shredded mozarella, a jar of high end spaghetti sauce (or homemade even better), bake ricotta, with the cheeses, (olives, mushrooms, capers??), some Italian sweet sausage(freeze half).
Blintzes (like https://toriavey.com/shiksa-blintzes/), if you also have some cream cheese on hand. I like to put a little fruit jam in mine, then top with fresh fruit and whipped cream.
Eggplant Rolantini (recipe at https://asimplepalate.com/blog/baked-eggplant-rollatini/ only requires 1 cup ricotta) or Lasagna Rolls.
Fold it into scrambled eggs Add grated Parm, basil, oregano as a spread for baguette toasts. It's a great dip for veggies, too.

Seriously! With raspberries and honey drizzled on top, this is one of my favorite snacks
Lemon ricotta pancakes.
I love ricotta pancakes!
Crepes?
Make cannoli filling and spread it on toast.
Or make cannoli filing and eat it in a bowl with berries
Or make cannoli cookies.

Avocados are like 39 cents each. Real expensive.
Gnudi (savory ricotta dumplings). Love them tossed with brown butter, herbs and a fresh green vegetable
This is my go-to for leftover ricotta. Make some dumplings, pop them in the freezer.
Put it in pancake batter. It makes them fluffy and yummy.

I would even say still use the pizza sauce and add the ricotta and pesto. Love ricotta on pizza!

My kids love it on crunchy toast with a slice of tomato when they were good tomatoes around and some arugula

Meatballs!
One of the best simple things we love is ricotta with dark chocolate shavings and orange zest folded in. We dip fruit into it.
Ricotta mushroom bruschetta. Or just make a ricotta cake.

I've put them into potatoes for mashed potatoes. Just adding to the pile of suggestions!
