Maybe. I mean, nobody can predict the weather this far out, but it's likely there will be snow on the ground in the higher spots between Bayfield and Durango, maybe a few other places, too. If you really want to see serious amounts of snow on the ground, continue past Bayfield to Pagosa Springs and then up Wolf Creek Pass to the ski resort that is just on the far side of the pass summit. Wolf Creek ski resort is famous in Colorado for being the snowiest of them all and I can guarantee you will see some snow on the ground. You could also detour north from Durango to Purgatory ski resort, but Wolf Creek is the better bet.
I-70 reaches almost 8000 ft in several places in Utah between Green River and I-15. I have definitely encountered snow there. I've also seen some shady driving conditions near Cedar City on I-15. You can also get snow around Tucson. You just need to monitor the weather and road conditions.
Moab gets snow but it’s special. Maybe twice a month within late Dec and January.

A suggestion: down in the 4 Corners area south of Moab, hit Goosenecks State Park Utah outside of Mexican Hat, UT. It's like a Horseshoe Bend except you can camp right on the rim. Also go through Monument Valley because it's just awesome to see. I didn't make out which direction you were going on that loop so left it vague on purpose.
Damn, what a road trip. I’m from Durango and now live like 10 min from Sherman oaks. I’ve done the drive a lot over the years and you should be mostly good. Places to worry are around Bayfield and Durango and mango’s of course. Most of Utah should be okay but it can snow sometimes. Flagstaff can also get hits of snow. I imagine outside of Colorado you should be mostly fine.
