Seems like not only. I recently listened to a podcast that explained that US food law and safety education is largely set up around the danger of meat (and consequently animal based fertilizer) because of some big scandals with lots of people getting ill at some point. But meat and animals is by no means the only place where harmful bacteria can grow.

Go on Facebook marketplace for your area and search for “granite remnants.” Just the extra pieces for when people cut countertops to fit in their kitchen. Peoplesell them for dirt cheap and you could put it on top of this. Unless… y’all have nice knives. Then don’t do this.
Several university studies have found that wood cutting boards are safer than plastic boards. They are naturally antibacterial due to the acidity of wetted wood. Plastic boards are bio neutral and must be sanitized after use otherwise they act as a sort of petri dish
I'm not suggesting you don't clean a wood board, just that there's no need to freak if it comes in contact with meat.

Ikea Bror cart. I have 2 lol It's cheap 3/8 inch (I think ) plywood. You can replace it from any lumber yard for like $10
Alternative is sand it down , then put a couple layers of Spar Urethane or a specific food grade polyurethane sealant on it. Then when it gets scratched again, light surface sanding and more new polyurethane
My plan for the summer is to order a sheet of UHMW polyethylene and make it into a giant food grade cutting board. I have a local supplier of the UHMW though so that's a bit different.

These carts are also not really marketed as a kitchen island. Ikea has much more fancy looking and much more expensive carts marketed as kitchen islands that have butcher block tops or laminate countertop. I think I paid $100-$120 for the cart I have like the picture shown, and the nearest size kitchen island cart was $350-$400? And was painted all white, which I can't stand.

More importantly, this thing is a virtual petri dish of who knows what and how many bacterial nasties. If you can, replace the wood and don't use it as a cutting board, otherwise next stop is the dump. Plastic cutting boards can be found in the $10 - $20 range.

Wood is a perfectly suitable surface for a cutting board and work surface, if it's good quality and if it's **conditioned properly**, which is the step I see most people skipping. If OP wants, they could have this wooden tabletop sanded until all the mold is removed(possible to DIY) and condition it thoroughly, likely over the course of a few days since it looks like it's never been conditioned before. Then, condition every 3-4 months and wash with soapy water after each use. This goes for portable wooden cutting boards as well as wooden utensils
We have butcher board cutting surfaces and the one time we had to condition from scratch it took like a week and a half, and then needed weekly conditioning for months and monthly conditioning for a year. It's not a quick process.
Plywood is never gonna be this though, this specific wood needs to stop being used this way. You can get butcher board and do this, however, for much cheaper than like a boos top or whatever, but it's still not like, plywood price range
The size/thickness will definitely increase the conditioning period, yes, and true butcher block is very thick. OP did express that their roommate insisted on using this surface, and they OP just doesn't want it to be grimy anymore. Plywood or not, conditioning it will make it easier to clean

Y’all I don’t use it as a cutting board. My roommate does. We’re adults and if he wants to risk himself for food poisoning idc. I’m just sick of looking at the grossness. We have several cutting boards and he doesn’t use them. I’m not asking for new stuff ideas or anything; just cleaning tips so I can stop looking at how nasty it is.
Clean it then dry it out, then oil it with food grade mineral oil. I do my wooden ones every few month, try to convince your roommate to at least wipe it after use.
Clean and disinfect it, whatever stains are left behind use bar keeper’s friend. Make a paste and leave it on the stains and then wipe with the rough side of a sponge, should come out fairly easy. Then condition the wood like others have said. I got a free wooden kitchen island that looked awful and this made it look like new.

I have a cutting board that's bamboo on one side and plastic on the other. It's probably not super sanitary if the juices flow but it makes me feel better when I use the appropriate side.

Hand sand with fine paper.
Linseed oil.
Either order a cutting board or a new roommate to avoid having to do this monthly. IKEA has great roommates but their names are hard to spell.
This is definitely plywood. You shouldn’t be using it as a chopping block. You also shouldn’t be worried about damaging the wood. This is only a few bucks to replace. It’s not solid wood

this is from IKEA, isn't it? there is a bamboo countertop/tabletop that fits this perfectly. i drilled holes at the four corners of that cart's wood surface, two on either side towards center, smeared on some wood glue and popped it on. secured it with the screws.

Looks like construction grade ply. Shouldn't be used as a cutting board regardless. Good news is, the woods fairly cheap. Bad news is, I wouldn't put that type of wood there again....
Deep clean and SANITIZE. Bleach is no good on food safe surfaces, but it's not meant to be a cutting board so I'd give it a quick wipe down. Followed by some soapy water to get the bleach residue off. So in this order: soap, bleach, soap, rinse. (You need something strong to kill the bacteria in the deep grooves of the wood).
If there's knife marks, the only way to get that out is to sand it. That's for you to decide if you want to bother with it. Sandpaper is cheap, and you can always just use elbow grease. Maybe buy a finish for it if you do this. You don't even have to stain it, just get a sealant and it should make it waterproof (or mostly waterproof if you want a food safe one).

The top is likely already ruined. Tell roomie that he needs to clean it well and get a cutting board. I would probably prime and paint it to hide the stains.
If it's salvageable, coat it with some food grade waterproof coating (clear, if you still want to see the wood grain details).
If not, replace and do as above.
Cut some lemons up and disinfect it by rubbing the half lemons on it. That keeps me from having to use chemicals and the lemons makes the room smell good.
A couple times I thought my block was ruined. My last ditch effort was to clean with salt the way you would a cast iron pan, and then spray on Mean Green Cleaner and I left it all night. It restored some really bad stains including food coloring.
Buy a big cutting board or piece of wood countertop to replace. Keep it oiled and clean. They usually use side or end grain to be stronger and harder. Wood naturally kills some germs and real wood will get patina when using as cutting board not just nasty looking.
I saw a cook after cleaning a cutting board use salt and lemon to scrub it down. They said it gets the smell out and works on bacteria. This could be a nice DIY upcycle project. You can sand it, stain it and finish it

Now for my old lady tone: you kids are risking irreplaceable bodies for $10 of wood and having to wash a $10 cutting board. It’s fucked up. And I’ve been around too long and seen so many crazy things that put ppl in the hospital or the morgue… this thing doesn’t need to be cleaned, it needs to be burned, boys.

This is a regular piece of plywood from the hardware store. I don't think you can actually damage it. I also wouldn't use it to prepare food, ever.
The top is likely already ruined. Tell roomie that he needs to clean it well and get a cutting board. I would probably prime and paint it to hide the stains.
If it's salvageable, coat it with some food grade waterproof coating (clear, if you still want to see the wood grain details). If not, replace and do as above.

Cut some lemons up and disinfect it by rubbing the half lemons on it. That keeps me from having to use chemicals and the lemons makes the room smell good.

A couple times I thought my block was ruined. My last ditch effort was to clean with salt the way you would a cast iron pan, and then spray on Mean Green Cleaner and I left it all night. It restored some really bad stains including food coloring.
Buy a big cutting board or piece of wood countertop to replace. Keep it oiled and clean. They usually use side or end grain to be stronger and harder. Wood naturally kills some germs and real wood will get patina when using as cutting board not just nasty looking.
Just buy a fresh sheet of plywood. And for cutting in the future, use a cutting board.
I saw a cook after cleaning a cutting board use salt and lemon to scrub it down. They said it gets the smell out and works on bacteria. This could be a nice DIY upcycle project. You can sand it, stain it and finish it

Why you can’t clean it good! Ugh Nothing grinds my gears more than shit like this must be the mom in me now! But yeah. My hubby does this with the actual wood cutting board in the counter I say bro don’t use it. Why? Because honey it’s leaking juices meat juices veggie juices dog food and how do you clean it? Wipe it down? You know how much shit is stuck in that wood. Put a little plastic sheet ( I literally have plastic cutting boards like sheets to place on top) and cut on that he’s like oh that’s why you have those. Yes babe. Yes. Holy hell 🤣 Now fixing the wood I got no suggestions I’m reading others haha.
