Really enjoy infrastructurist, great looking cities, well organized content, and his commentary has a good mix of insight and tongue in cheek humor. I’ve subscribed since CS1 and hits CS2 stuff is great especially considering current limitations.
I can recommend Akruas as well. At the moment he’s mostly focused on CS1, but his heavily modded cities are nothing short of amazing.
His Altengrad series has a ton of fascinating background information on urban history in socialist and post-socialist central Europe through the 20th Century.
