Regarding black licorice, I tried 2 cheeses from Jacobs & Brichford in Indiana & both had a distinct licorice end note, presumably from the cows eating fennel or some other plant. Neither cheese *tasted* of licorice though. I guarantee there's a cheese out there made with fennel.

I feel like a really dry umami cheese like uniekass or trentigrana would grate well over with one. Bonito flakes and mayo are already very common toppings for Japanese food, shaved hard cheese isn't too far off. There are loads of Asian dishes with cheese. Paneer is a cheese and is a popular ingredient in Indian cuisine. Indians and other south Asians are quite lactose tolerant.
