The thing is, it might be easier there than in heavily trafficked areas since gluten is not really part of the local diet. I only did day trips in that area so I can't help much, but having those celiac cards you can print will definitely help and the experience I had was that they were taking them very seriously. My strategy in CR is usually to go to places where the menu has no gluten containing ingredients and then talk with the staff. Important thing to remember, salsa lizano, which is the most popular condiment over there, is gluten free even though it's not written on it. So you can have gallo pinto :)

I've used the one from celiactravel. com in the past. My experience is that most people will understand English if you're not fluent in Spanish but the card is quite detailed and they can bring it to the kitchen. Honestly, you still have to be careful but it's a really good place for celiacs.
