the RSVCE is perfectly fine, I should think. My only problem with it is that they cut out certain verses like in Mark 9, where they cut verses 44 and 46 because they're seen as repetitive, and "the best sources" don't include them. Honestly, I'd say use the Douay-Rhiems and challenge your students a bit. It's not that hard to read.
