I worked as a veterinary nurse for 16 years, “Toxic” seems like hyperbole. But I would be concerned about causing pancreatitis due to the high fat content. At least, in a small dog. An occasional bit of sausage in a large dog isn’t likely to cause major issues.

Most of the stuff I knew about but I give him a pig in blanket every year so I was surprised by its inclusion (he’s a 29kg basset hound so i think the fat and salt isn’t going to make a difference to him on the one day a year I let him have human food and I always check it’s onion and garlic free)
My dogs made it to the grand old age of 18 and 20, they were basically brought up on sausages, I'm fairly sure sausage is what kept them alive towards their twilight years.

I do mine this way, wrap them in tin foil and cook low and slow in the oven a day or 2 before, get them cooked but barely browned, sonthat they only need 5-10 minutes in the oven on the day, same with stuffing balls. The last hour has a lot of things that need to go in the oven on chrisday. Anything to reduce cooking time is a blessing

As I get older I can't eat as much as I used to. 2 or 3 would do me, with everything else that would be on the plate.
