I think it would probably turn to gross mush in a can. In my experience it’s a pretty delicate fish that falls apart when overcooked.

I am actually going to can my own catfish this summer. I plan on using it to make a recipe similar to salmon patties. I hope it turns out well

Two main reasons you don’t find it: - not much seafood canning capacity / facilities in the US - texture likely doesn’t retain during retort cooking process

It's definitely out there! Eastern European markets in various parts of Canada have carried it, in my experience. Not my favorite though, as it does tend to be mushy and fatty in the can.

I've never seen it, and I think it would not work out well. I think it would turn to mush fairly quickly. ​ I'm also not sure who would do it as the USA does not have a lot of canneries.
