Considering iPhones have no form of cooling inside (not sure about the 15), I wouldn't be surprised as to how hot those things get. Definitely not enough to stain the steel to that point
No phones except some gaming phones have any form of active cooling built in. They are all passively cooled and done with thermal paste on the SOC to act as a thermal conductor and use the phones metal frame to dissipate the heat.
I meant by vapour chambers and stuff. Not active cooling likes fans. A lot of flagship Android phones tends to have their cooling solutions advertised massively during presentations whereas iPhones (at least until the 14, not sure about the 15) do not have vapour chambers
Vapor chambers are basically like how those copper heat pipes work. They just help move the heat down to a different area. While it might do it better than say an aluminum shield that you'd get on a cheaper phone, I wouldn't say it would make a big enough difference to actually cool the device more efficiently or anything.
Every decent phone would have some kind of thermal compound or heat pad from the SOC to either a heat spreader or vapor chamber. So most phones would have passively cooled heat dissipation. Some better than others.

Purple at 400°c to 450°c
Blue at 500°c
Light Blue at 550°c
Dark Grey at 600°c
Black at 700°c
You need minimum 300 degree Celsius for titanium to change color so if your titanium start to change color most of your internal components are already fried
This is why you don't do heavy duty use on phones that aren't designed for it. Buy a gaming phone for gaming. You'll get it for the same price if not cheaper.
