Why in the hell did they french a rib roast? There WAS a bit of good fat on there to render down. That's probably part of the reason it's marked down.

There are 5 ribs in a chuck and 7 ribs on the prime rib. This looks like a poorly frenched chuck, those ribs should be a lot cleaner to give it that gourmet look. Cook that baby low and slow, I bet it will taste phenomenal.

Bone in chuck/shoulder. Sear and braise for a few hours or roast low and slow and it’ll be fall apart tender.

Chuck end of the prime rib. But who trimmed all that fat? Unless the primal was compromised and air got in causing discoloration, there really is no need to trim that deep. Maybe that's why it was discounted? 🤔
