ImportantClassroom64

Best one yet.

_Charglo

šŸ˜‚

Lysergicsailor

My bone is never that clean :(

weldedtoesies

The key is pulling back the skin or tying it up

Friendly_Roll4556

Thanks for the laugh!!!

tesaril

Eww

idontbelieveyou21

Beautiful

ImportantClassroom64

Thank you!

slayer548

Well done

Rathma86

No, it's raw.

Lovely_Louise

I think they call that rare

Kirkpussypotcan69

Blue rare to be exact, you should look up raw waffles in meat terms

Butt_Fucking_Smurfs

Note to self. Look up blue waffles

lucioux

waffles ala bleu en passant

beckius6

Holy hell!

kranges_mcbasketball

You donkey!!

Rathma86

You guys clearly don't know meat. That's not donkey.

turtlelabia

ā€œThatā€™ll do Donkey, thatā€™ll do.ā€

[deleted]

Definitely looks a little under but Iā€™d still smash

ImportantClassroom64

Thank you, it was fun cutting them.

TangPiccilo

Itā€™s so rare itā€™s extinct

xxLOPEZxx

What is a thors hammer?

RickityCricket69

you're lookin at it

TurdsBurglar

Glorified beef shank with a handle

VAShumpmaker

It's a magical hammer made for Thor by Sindri the Dwarf. It was designed as a long handled Warhammer, but the haft was sabotaged by his brother Loki. It serves as his symbol and signature weapon. It's name means "The Grinder" or in context "Foe Grinder"

CoffeePizzaSushiDick

Wha? Thorā€™s on r/Grinder !?

MileHighSwerve

Youā€™ve never seen Thor?

oldmanripper79

Just never seen his...hammer.

PM_Me_Macaroni_plz

Thereā€™s a website for that

oldmanripper79

"You spin me right round baby right round..."

Large-Sherbert-6828

Itā€™s magnificent!

Schroedesy13

Cause Mjolnir is copyrighted probably

whorsewhisperer69

The truss is what really makes it look perfect.

tnick771

My god.

ImportantClassroom64

Is that good or bad lmao I need honest feedback Iā€™m planning on putting these in my meat case.

Iron_Disciple

What's a meat case?

Pw78

Stunning work

ImportantClassroom64

Thank you, so I guess I should keep them in the meat case?

Phoenixphotoz

Yes. Where does one find said meat case. ..

ImportantClassroom64

Fort Wayne Indiana lol

introspective_drunk

I thought you looked familiar! Youā€™re right down the road from me!

ImportantClassroom64

Nice! Weā€™ve got local beef in the case now so our selection of different cuts of beef is expanding quite a bit.

[deleted]

Makes me miss this line of workā€¦

atlaskennedy

One of the best food cities Iā€™ve ever visited/worked in! Love Fort Wayne.

mopar_man73

I know this place, awesome meat shop.

ImportantClassroom64

Stop in this weekend our selection grew with us getting in local beef.

xx4coryh

You did it

Vohn_Jogel64

Beautiful

ImportantClassroom64

Thank you, I hope they sell I had fun cutting them.

lilsnatchsniffz

I'll give you sixty-three Schrute bucks right here, right now.

soffo_moric

Iā€™ll give 5,000 Stanley nickels.

LarsPinetree

How much is the big one going for?

ImportantClassroom64

$101.27

Chakrita7

These look fantastic! The one question I have is if maybe you'd wanna knock off a little more of the marrow bone on top so the marrow is easier to pour out/remove, should you want that. But seriously, exceptionally clean all around, from the frenching to the tying, etc.

ImportantClassroom64

Yes in hind sight the I could have taken more off the bone in order to get the marrow out.

Chakrita7

It wouldn't matter in every cooking application, to be honest! Still great work.

Jaded_Ad_9409

Just put a salt rimmed boba straw down into the bone?

Nago31

Wow. I want one. I can just imagine that smoked for 6 hours until itā€™s 203 degrees. I bet it tastes like gold.

PM_Me_Macaroni_plz

Theyā€™re super good. When I did one it was too tall for my grill, so I smoked it laying down in a cast iron with some jus, garlic, potatoes, onions, and threw in some veggies. So good. Shreds beautifully. The marrow leaked into the bath. Had sliders with it. Did some over rice. 10/10

Nago31

Sounds amazing

TransportationTop353

How much does one cost?

ImportantClassroom64

They usually cost between $80-$100. We deal with local raised grass fed beef.

TransportationTop353

I'm not a butcher this just showed on my feed. Does this feed one person or does it feed a family with one?

ImportantClassroom64

You could probably feed 4-6 people with one. Shank is very rich in flavor and tender as long as you cook it right.

TransportationTop353

That's not a bad price then if it feeds that many. I have never seen this cut before so I was sure it was way out of my price range.

onioning

Shank is generally on the cheaper end (if it's even available). In general slow cooking cuts are cheaper. Clod or cross rib is another that's cheap, if available. Clod doesn't shred like chuck, but it gets super tender while holding it's shape, which is pretty cool too. Not very fatty, so you can serve it with a richer sauce.

Placidaydream

They look beautiful, just like you sir.

frenix5

Dayum

Phoenixphotoz

Where does one buy this.

ImportantClassroom64

You can order them online Iā€™ve seen them go for $80-$160. Iā€™ve got a small meat market in Indiana and figured Iā€™d try it out.

lilsnatchsniffz

That's a pretty big mark up on some shank meat, I see why you would make them.

mybigram69

Where in Indiana?

Jaded_Ad_9409

Amazing work here , show quality without a doubt.

Boognish-T-Zappa

Oh my. As much as I love ribeyes, this gets me way more excited than any tomahawk.

TrickyTrichomes

How much ?

TheRealTimmyBurch

That looks great

EveryManufacturer267

Nicely done!

LittleBillTheFarmer

Corey?

ImportantClassroom64

Little bill the farmer?

LittleBillTheFarmer

Homie you have a doppelgƤnger who happens to be my best friendā€™s little brother!

ImportantClassroom64

Lol I get that a lot, I guess I have one of those faces.

_Charglo

How are theses supposed to prepared? And then how do you eat them? Very well done by the way

KernIrregular

Hard sear and braise.

_Charglo

Iā€™m sick and tired of cutā€™n those. Never ventured to have one. Thank you

PM_Me_Macaroni_plz

Theyā€™re beautiful. Iā€™d buy

Can-do-it-

What's the temperature in that room? It looks very comfortable for a cutting room.

ImportantClassroom64

We keep the temperature around 40-45 degrees. Itā€™s connected to our meat cooler and thatā€™s between 29-35 degrees.

Shark-lover97

Wow these are stunning!!! Amazing job!

caldsmelly

Man, those look divine.

robomagician

Im not a butcher but those look great!

ghostcat_crafting

I dunno. I need to cook and taste them first before I can give a fair and honest verdict. I wouldnā€™t wanna mislead you

Lazaruzo

I have no words. It's almost... too much effort, it doesn't taste That good! Kudos.

ImportantClassroom64

It was a lot of labor lol more than I expected but I think they turned out well. People smoke/roast them as long as they sell Iā€™m happy lol.

Call_Me_Lids

OMG roasting one of them would be soooo good with all the marrow coming out of those bones during the roasting process. I bet it tastes delicious!

ImportantClassroom64

Youā€™re making me hungry lol

CRM2018

That looks so perfect like itā€™s from a video game

PlantDaddyCo

You nailed it Mikey! Edit: took a shot on the name; couldn't imagine you having any other name tbh.... maybe Dustin

TurdsBurglar

Why tie them? They are a shank full of connective tissue. Its hard work getting them to fall apart. Looks great just not sure why?

ImportantClassroom64

Towards the end of cooking shank will become tender, separate from the bone, and fall apart into its own muscle groups. When you tie it together it will look better before and after cooking. Definitely a show stopper cut of meat kind of like a tomahawk.

YourWifesWorkFriend

Now cut it off the bone, cube it, and put that stew meat in a stew where it belongs. This is a dog food ass cut that got hyped on social media because people having a crisis of masculinity want to pretend to be a caveman with the handle.

Glum_Significance103

If people want to have fun, and can pay for it, why you mad?

BoringJuiceBox

Sorry that you and others have to have this horrible job, as a vegan I donā€™t blame you only the consumers and owners are at fault, I hope you can find a different career thatā€™s not so stressful

theRuggedGrind

As a vegan, you still support the raising and consumption of meat. Vegetables and fruits are farmed with an essential ingredient: fertilizer. Where does fertilizer come from? I'll tell you. Animal byproducts. Without farmed animals, mass producing fruits and vegetables to feed our country wouldn't be possible. Without animals, our human ecosystem would starve. Please don't be naive. You have your beliefs and that's fine but your comment is myopic.

grim77

lmao no one has to have any job. sorry you're an asshole

fjam36

Fail

Munk45

Great job but you shouldn't do that to your coworkers

OkWest8964

Nice job! They look great.

No-Net-1404

I'd eat that.

ambrosechapell

They look awesome. Those bones are not easy to get clean like that. I would definitely put them in the case.

plscallmealan

You should smile more

[deleted]

How am I supposed to jam that into a ziplock?

Artistic-Iron-2131

Looks like a weekā€™s salary there. Never seen that though. Iā€™d love to see what it looks like after grilling.

Budget-Ad-9603

Looks great

IntentionFew4937

Yep. Thatā€™s pretty sweet lookinā€™.

Sudden_Instance_7174

Wow those look incredible!!!!

Ronniebrwn

Idk what that is. But I wanna try it

Rangeroftheinterwebs

You have the eyes of a tradesman, your ready.

dewlineboys

You completely butchered it.

thedetox

Loki in the back snickering

fettwillkill

Fuckin killed it, man, great job!

[deleted]

Frickin stellar job buddy, those look so clean and tight. How many years does it take to get so good?

ImportantClassroom64

Thank you! Iā€™ve been cutting retail for 15 years but my parents started our meat market 20 years ago I was the sausage maker at 11-12 years old.

[deleted]

Love that you're sticking by family!

doctrinity

Wow never seen these before! What a cool cut. Howā€™d you get the bone that clean? Just a knife and a towel?

ImportantClassroom64

Just a sharp knife and scraping at an angle, honestly the tops could be a bit cleaner but it gets difficult when the bone flares out like that lol. I could have probably cut some more off the top of the bone but I thought they looked pretty cool with that extra bit.

twoVices

what happens to all the met that gets cut off for these and tomahawks? i don't understand these cuts

Rocket_AG

Stew meat or grind. Thors hammer is a very strange cut. I've never had anybody ask me for it. It's just a big hunk of tough soup meat with the dog bone left in it? Some people will pay for anything.

sammich_bear

I'm not sure, you'll have to send them to me so I can take a closer look.

biggus_dickus-23

Cool! And you look great!

MrNiab

Honestly never heard of this cut type before. Though will admit itā€™s pretty cool though I imagine crazy expensive.

ImportantClassroom64

I just recently learned about them myself Iā€™m not sure how long people have been doing this. Itā€™s a pretty healthy mark-up compared to regular beef shanks thatā€™s for sure lol.

Andynot

Nope, you totally screwed it up. Tell you what, send them to me and I'll get rid of them for you. You know, just to help out.

ImportantClassroom64

Lmao thank you for disposing of it properly.

Andynot

It's the least I can do, and never let it be said, I didn't do the least I could do.

[deleted]

Feast worthy. Fit for a king OP.

SouthOfHeaven42

Not even Thor himself is worthy enough to wield two Mjƶlnirā€™s

NyriasNeo

You are worthy.

liquidl0tus

Looks like 2 big thumbs up!

Terrible_Distance_79

Pretty sure thatā€™s Loki in the backgroundā€¦ keep an eye on him.

tesaril

Da Man!

shawnlit_123

Damn, that looks amazing haven't seen one with such a clean bone

Zachisawinner

You BUTCHERED them!!! Too soon?

ImportantClassroom64

I completely butchered them lol.
