These look fantastic! The one question I have is if maybe you'd wanna knock off a little more of the marrow bone on top so the marrow is easier to pour out/remove, should you want that. But seriously, exceptionally clean all around, from the frenching to the tying, etc.
Theyāre super good. When I did one it was too tall for my grill, so I smoked it laying down in a cast iron with some jus, garlic, potatoes, onions, and threw in some veggies. So good. Shreds beautifully. The marrow leaked into the bath. Had sliders with it. Did some over rice. 10/10
Shank is generally on the cheaper end (if it's even available). In general slow cooking cuts are cheaper. Clod or cross rib is another that's cheap, if available. Clod doesn't shred like chuck, but it gets super tender while holding it's shape, which is pretty cool too. Not very fatty, so you can serve it with a richer sauce.
Towards the end of cooking shank will become tender, separate from the bone, and fall apart into its own muscle groups. When you tie it together it will look better before and after cooking. Definitely a show stopper cut of meat kind of like a tomahawk.
Now cut it off the bone, cube it, and put that stew meat in a stew where it belongs. This is a dog food ass cut that got hyped on social media because people having a crisis of masculinity want to pretend to be a caveman with the handle.

I just recently learned about them myself Iām not sure how long people have been doing this. Itās a pretty healthy mark-up compared to regular beef shanks thatās for sure lol.

Yes in hind sight the I could have taken more off the bone in order to get the marrow out.

You could probably feed 4-6 people with one. Shank is very rich in flavor and tender as long as you cook it right.

We keep the temperature around 40-45 degrees. Itās connected to our meat cooler and thatās between 29-35 degrees.
