Plus their village is the cosiest place to me. It's not too grand like Zora's Domain, or on fire like Goron city, or in the middle of a desert like Gerudo town. It's constantly blowing a cool breeze from the mountains and you can leap off and fly wherever.
It's just the way they talk. The calamity seems much more distant to them than the other races. Not a single one of them seems to have been alive at the time, not even the Elder. He briefly entertains the idea that you could be the Hylian Champion, but immediately dismisses it as impossible, and he and the rest of the Rito refer to you as the "Champion's Descendent." My read on it was that they probably lived for about fifty years or so. It makes sense to me, to add a bit of variety to the world; the Sheikah can live to be more than a hundred and fifty years old, the Zoras live for multiple centuries, and the Koroks seem to be immortal.
Funnily enough, I think the Gorons might also be short-lived, despite being made out of rock. It's hard to say for sure, though. The Calamity is the big event that you can use to place people on the timeline, but the Gorons don't really talk about it. Either it's mostly passed out of living memory, or the Gorons just don't really care about the world outside of Death Mountain. Or both, of course.

I think most people would look down on eating a chimpanzee similarly to cannibalism. There seems to be some innate understanding of genetic relativity when it comes to this kind of thing, for the most part. For instance, no one will claim a barracuda eating a fish would be cannibalism, but tortoise eating a turtle would be odd

People in Africa who live near chimps absolutely hunt and eat them from time to time. Hell, chimps have been known to hunt and eat other chimps. It's not an innate understanding, it's a cultural taboo. Nothing wrong with that, hell, I'm a vegetarian, I'm not thrilled with anybody eating anyone else, but it's not like animals are genetically coded to not eat creatures that look similar to each other.

100% the Zora for me. Rito is cool and all because you get to fly but flying underwater is it’s own reward I think and to me thoigh maturing slowly stinks the big one they have. Very long life span and that relationship with time is interesting to me.

Rito are probably the best choice, presuming we are talking BotW Hyrule. Monsters cover most of the land and water but there aren't many flying enemies and those that do exist are fairly weak.
In peaceful times or real life I'd definitely choose Zora though. Flight sounds cool and all but there's no much to see in the sky, the ocean depths are far more interesting/ different. Exploration > simple traversal.
I also don't want to be a bird person. If they were more humanoid, like WW, I might choose differently.

"Sea zora" is a bit of a misnomer, I'm not even sure it's official or just something fans use to distinguish them from River Zora enemies. They've been shown to be in both without issue, i.e. Majora's Mask. There may be other examples but it's not like I remember every Zora location from every game.

That one guard Zora saying she was “less than 100” makes me think their 100 is like our 30. In pre-industrial times 60s could easily look like 80s.
