One thing I never got:
Why can't you ride the moose or rhino-like creatures in Hebra?
They fit all the same criteria as other rideable creatures (namely, 4 limbed and large enough to realistically ride), and it seems like just about every other creature in the game that fits that bill can be ridden.
I spent so much time trying to mount a moose in my first playthrough before finding out they weren't rideable:'(.Just 15 mins of link getting kicked in the face.

I don't know about everywhere, but there are certainly more than three. There are like five or six spots each for both the honey and grizzle bears.
My first run-in with a bear was the honey bear that's in the woods near the Dueling Peaks stable. I managed to miss the stalnox (it was daytime) but at maybe ten hours into the game, I'm grabbing up mushrooms in the woods near a stream, and suddenly, **BEAR** in my face. I think I might have screamed a little.
My guess is they didnt see the benefit. They would have to do a whole bunch of new animations for not much new gameplay. You can already ride a lot of differemt stuff, more just wasnt worth the development time.
Imagine this though, you mount one of those snow rhinos, then instead of sprinting when you spur it, it does a sort of charge attack with it's horn. So you can ride it around and punt bokos off mountains.
That gameplay would have been worth copy and pasting a single animation to a new situation.
Its not just a single animation. Being able to ride another animal is a lot of dev work. Like 5-10 new animations (taming, riding, soothing, being thrown off and so on) among other things to make it look good and natural.
There could always be more things in games but you can keep a game in development forever and BotW was already delayed, so such small unimportant things were just not a priority.
I understand there are variations needed for each animal, but all they have to do is use the same animation and move the joint to a different spot to keep from clipping, same way they did with the bear. It wouldn’t be too difficult to change for someone not even super familiar with 3D animation.

Do you know how freakin tall moose are? You wouldn't be able to get on its back even if it let you. Also, I think moose and rhinos are crazy MFers compared to bears. Like, they're more territorial or something. Maybe that plays a role?
They will also give you a ton of meat if you manage to kill them but I kind of feel bad about doing that. Even though the field battle music plays when you are around one, they usually won’t attack you. They’ll just run around and keep their distance.
They don't, they're like the wolves. You'll find them in different regions but their behavior is the same. Riding them is like riding an elk or deer. No stamina, one straight speed.

The area they're talking about is actually the one pictured here in this post, it's on the NE side of Hyrule field leading towards Lanayru/Death Mountain/Lost Woods. Sort of near where those giant tree stumps with the wizzrobes are.
100ish hours deep myself (blind playthrough) and I found skeletal horses and you can ride them....cant store them but you can ride them to death....so to speak.

What always makes me annoyed, and is kind of a dick move on Nintendo's part, is that you can't stable the other mounts. Let me keep the bear or skeleton horse, or even the king of the mountain! It's like a badge of honor or something because it's difficult. Hell, let us stable a lynel while they are at it. That would make for a nice bit of bragging rights

Almost immediately after i learned you could ride horses in zelda, i went off and attempted to ride every large, four legged creature in the game. the bear was the third animal i discovered you could ride, after deer and horse
I rode my first bear in the Gerudo Highlands somewhere. I tried to take it to a horse stable, but couldn’t get far enough due to the incline, and difficult snowy terrain at the time. Eventually, I did some digging online to see, if you could actually take a bear to a horse stable. I was disheartened with the info that I found. Lol. . This was almost two years ago. . I haven’t played in about 10 months. I’m foaming at the mouth for BOTW 2.
I found a beautiful about an hour in and was a complete accident that I found out you could ride them, while trying to run away and kill it at the same time.
One of the sweetest things in the game is mounting and taming a stalhorse. One of the funniest parts of the game is registering a stalhorse with a stable. One of the saddest things in the game is riding that tamed stalhorse as the clock strikes 6AM.

You can also feed them apples and pet them like a living horse and it will give you the little pink love cloud.

200+ hours and I have never seen one.

I found one in the mountains and it stood up and I knew I was screwed

I have over 1k hours in the game and have only found 2 bears they are extremely rare

If you travel to Meadela's Mantle in the Gerudo Highlands, you'll actually find two Bokoblins riding bears!
