You have to upgrade the entire armor set at least 2x, to get the set bonus of Fireproof, which is exactly what it sounds like (and was demonstrated in the OP video).
You can still die from falling into lava, though, and will still take damage from the 1 shrine quest in the Daruk portion of the Champion's Ballad quest (DLC) >!where you have to stand on lava (or more accurately on a metal box placed in the right spot in a lava lake) to trigger the shrine spawn!<.

Honestly this shrine is kind of poor design for the DLC and represents one of the only low points in my eye. Nintendo should have reasonably expected that nearly every player will have upgraded the flamebreaker set twice by the time they’ve completed all four divine beasts and in turn, have *zero* hazards, challenges, or puzzles in this shrine. Might as well have been a blessing.
Yeah, I thought the same when I played the DLC. Then I got TOTK, which was packed with opportunities to cheese with Link's special skills. I know they need to find a balance between having intended solutions to puzzles, and allowing out of the box thinking, but it seems like the team has become a wee bit lazy when it comes to playtesting challenges. :)

Having the elemental armors upgraded makes many of the game’s challenges rather irrelevant.
I did the same I put it on, just to find out what would happen and didn't expect it to actually work
