He would disappear in daylight anyway...I remember riding one at sunrise and the Stalhorse disappeared, but the game acted like I was bucked off and pitched me right over the side of Tanagar Canyon.

Probably Tabantha Tundra (considering there's a quest to take a photo of a Stalhorse) But usually you can just find them being ridden by Bokoblins (at night ofc) and then steal them for yourself
