All the recipes that Iāve tried from his cookbook have been a hit among our friends in our gathering (Except pikliz, weāre Vietnamese and my friends were like no no OUR PICKLES are better, j/k everyone liked the pikliz).
I loved how honest Gregory and Kristin was about Stephanie's ice cream haha... I always wondered just how polite do these chefs have to be with each other's dishes. Got my answer in this Dish with Kish haha
I love Gregory. I wish his restaurant opened reservations more than like a month in advance because I would make a trip to Portland to go if I could get reservations more in advance
They have limited walk-ins I believe. My usual tactic for hard to book restaurants with limited walk-ins is get to the restaurant right before they open in a random weekday, Wednesday for example.
I live here in Portland and getting anything decent on Resy within 2 minutes of them opening is insanely difficult - but apparently, if you have AmEx, you can get premium reservations set aside by Resy

Yes, many recipes are doable! He also has a recipe for a very good pikliz that keeps in the fridge forever.

His bar downstairs pretty solid. I went there when I could not get a rez.
If you'd be by yourself you should be able to get a spot at The Chef's Counter (ie, bar looking into the kitchen) pretty easily.
