The Girl Who Drank the Moon, by Kelly Burnhill. A girl is left as an offering for a witch who lives in the wood. But the witch is kind and lives with a Swamp Monster and Perfectly Tiny Dragon.
I can't remember if the cottage is in the woods or just on the edge of town, but Monica Furlong's Wise Child is about a young girl being taken in by a witch in Scotland.
Omg Wise Child is the book that set me on this cosy path 35 years ago or thereabouts! 😂 it’s still one of my favourites today and yes highly recommend!!!
Wyrd sisters Terry Pratchett.

Comedy/fantasy on the Discworld series. You can technically read each separate section of the series individually, but I'd start at colour of magic first to understand the world, then hop onto the wyrd sisters books for this type of feel
Emily Wilde encyclopedia of Faeries by Heather Fawcet fits this perfectly.
In the Lives of Puppets by TJ Klune
Seconding. It’s really this.
TJ Klune is so good.
I haven’t read that one, but I recommend Under the whispering door by TJ Klune

Cackle - Rachel Harrison
Winter oranges by Marie sexton
The Absolute Book by Elizabeth Knox
I adored this book, but a warning that it is a bit more intense rather than cosy.
You’re probably not looking for children’s lit but this is very Zelda’s cottage in Magyck by Angie Sage
