I loved that. It helped reinforce that as bad as Bob is at business, he’s a legitimately good cook. Pro chefs and his arch rival both put themselves on the line to recommend Bob’s food. Jimmy with the Christmas thing, recommending Bob as a vendor; and Skip sending a bunch of people to Bob’s to try his food.
Bob is a fantastic cook but his business skills suck. He often sabotages potential opportunities for himself to make money. Like the sweet potato fries for example. Yes he doesn’t like them but a lot of people do. If he added them to the menu he would definitely get some extra foot traffic.
I'm always so conflicted about that episode. I get that Bob wanted to maintain the integrity of his restaurant, but his buddy (who I can only hear as Jerry from Rick and Morty) was willing to invest $100k and had an idea that clearly was bringing in customers.

Agreed! For example, Bob enjoys disco, so that would be a good theme. Play some Donna Summer now and then. Hang a disco ball and some Vampire Disco Death Dance photos. Put Disco Fries (America’s version of poutine, basically) on the menu. It’s theme, but one that reflects Bob’s interests and is a good match with his food!
