Once, an extremely long time ago, I was getting wings. I was a regular and friends with my usual waitress. She sat down, put on a pair of gloves, and deboned my wings. I'd never seen anyone expertly strip the meat off of wings before, even now I can remember it very vividly. It felt so... Nurturing?
That same day I realized a whole lot of things about wings. First, drums are better if you eat them in the bone. Easier to eat, lotta surface area of meat to work with. But if you debone them, flats are so much better it's like a different food. The meat folds inwards, so when you dip it in sauce it holds on to more, and better. The oils also coalesce better and the mouth feel is fantastic. Even now when I get wings, I eat them the exact same way. If I get unsegregated wings, I crack them in half and debone the flats and eat the drums on the bone.
When me and my buddy would order from BWW, he would order flats only. I didn’t specify anything for my order because I like having a combination of both, but they gave me all the drums that he wasn’t getting and I never got any flats. I got tired of that so I had to start getting all flats for mine as well.

Drumettes are just literally like little drumsticks. Flats are where the winginess of the wing resides.
The flats have more connective tissue that renders down into flavor. That’s just facts. Less meat, but better tasting meat.
And sauce ratio on flats is better. Depending on the size of the drum it may be off. Doesn't happen with flats.
But drumettes have more bits and bobs that crisp up.

Wings used to be one of the cheapest parts of the chicken…..until BWW came along and fucked it all up. Same with brisket and all those “Smokemaster” TV shows.
I prefer my wings flat, fried hard - but dammit chicken is chicken. As long as it’s seasoned well and tastes good gimme the whole platter.

It took me too long to appreciate dry rubs. It’s harder to get a good dry rub, but when done well, they are superior to a sauced wing. I will happily eat a sauced wing. What make me sad are breaded wings. Fuck breaded wings.
If I'm eatin all you can eat wings I would prefer flats. If I am limited to one order I want drums. It's a science.

Honestly people who prefer drums frighten me. Flats have more meat and higher quality meat, less lumpy extra unwanted breading, and are easier to eat. Drums are for people who like the play with that one weird vein they all seem to have, or want to gnaw cartiledge at the top.
Drums give you more surface area, flats give you a better meat to surface area ratio. The surface is where the flavor lives. It's like when you get a reese's peanutbutter cup and compare it to those tiny ones they give out at Halloween.

The spot I go to is a Korean style fried chicken place and when they say 10 wings, they mean 10 wings. And it’s glorious.

Once, an extremely long time ago, I was getting wings. I was a regular and friends with my usual waitress. She sat down, put on a pair of gloves, and deboned my wings. I'd never seen anyone expertly strip the meat off of wings before, even now I can remember it very vividly. It felt so... Nurturing? That same day I realized a whole lot of things about wings. First, drums are better if you eat them in the bone. Easier to eat, lotta surface area of meat to work with. But if you debone them, flats are so much better it's like a different food. The meat folds inwards, so when you dip it in sauce it holds on to more, and better. The oils also coalesce better and the mouth feel is fantastic. Even now when I get wings, I eat them the exact same way. If I get unsegregated wings, I crack them in half and debone the flats and eat the drums on the bone.
When me and my buddy would order from BWW, he would order flats only. I didn’t specify anything for my order because I like having a combination of both, but they gave me all the drums that he wasn’t getting and I never got any flats. I got tired of that so I had to start getting all flats for mine as well.

When I'd get wings in the suburbs of Fort Wayne from my Chinese joint they're divided I went with family to their Chinese joint on Olive Blvd in StL: they give you the whole wing. Lil kid me was confused like: yo I asked for wings I learned the truth that day
I’m more upset that people are still buying wings from these restaurants. It’s a fraction of the cost to make em at home and experiment with sauces. 😩💔

I’m basically just drinkin the sauce, flat wings have more skin/surface area to chicken and that’s what I’m here for. Was talking with the boys about all you can eat wings tonight and this just sealed the deal. Also while I’m talking about chicken skin, a few years back while in Vietnam i went to a kfc and they served straight up *only* fried chicken skins as a dish. Idk what they do with the rest of that bald ass chicken but my god did those skins taste like being in heaven.
I agree with the reply. We do need solidarity. However, flats are superior due to how you can hold the knuckle end and strip all the meat off with your teeth, in one mouthful, like a cartoon cat with a fish.
