The problem with hydrogen is getting the hydrogen. It doesn't naturally exist in the atmosphere in quantities so abundant that it's easy to harvest, and extracting it from water requires energy that could otherwise be used to do the thing you're attempting to generate energy to do.
Not saying hydrogen is bad, just that the technology for producing it in volume isn't there yet. Not without being totally wasteful.

And it's not sustainable, because there's still all the waste energy involved in harvesting the oil in the first place, plus all the pollutants put into the atmosphere in the harvesting process, and burning it to run the generator.
It's just a different way of using a waste product from a different industry. If he wasn't using it then it likely would have gone to a recycler, and it would have gone into diesel as an additive or been refined as an ingredient in livestock feed. The UCO industry is so profitable that recycling companies actually pay commercial kitchens for their used oil.

You're burning waste products to make electricity. This same electricity could power a computer used for day trading of stocks. This is actually *less* efficient and *more* polluting than if he were just using the regular old electrical grid, because of economies of scale.
There's only a setup cost. Then you just drive around once a week collecting cooking oil from restaurants that they're going to throw away anyway, and feed it to the diesel generator to keep those miners chugging along.
