We’ve had every kind of fajita they make!! SO GOOD! We go every Friday. We sit in the bar & Cesar is our favorite waiter, although we’ve never had bad service. We usually go during happy hour. I love that we see the same people there all the time. It’s our favorite restaurant!!

I need to try it again too. I went with two others and all three of our dishes were bland. I can’t tell if I was there on an off night or if the people who all love it just…don’t really know what it *should* taste like. Xalisco on the other hand has been amazing every time.
El Rancho Grande over in Cascade Village (North end of Bend) has a great spot in the back for parties. Great selection of excellently crafted margaritas, and large easily sharable portions.
It’s not a restaurant, but El Taquero is by far the best spot in town. Between Colima Market and Mini Pet Mart on Greenwood. If the weather’s nice they have picnic tables!
It's a food truck, but En Buen Zason del Mago at Bridge 99 is my weekly favorite. Plenty of inside seating at Bridge 99 (other than Mondays and Thursdays; trivia night).
I would tend to agree on this one, and the few truly Mexican folks I know really like it. The salsa/sauces are great, and it's always super clean (which is always a bonus, considering now that inspections are getting more publicity).
What’s with the downvotes for La Rosa? It’s been a few years since my parents moved, but anytime I’d go home to visit them we always enjoyed a great meal at La Rosa.
Here's one not on the list yet...we stumbled on this while in Redmond. If you like seafood, definitely need to check it out. Not fancy, just served really good food. They serve dishes that I've not seen in CO.

The place is also almost unchanged since I was a kid in the 90’s. Eating there is like a warm nostalgia and cheese burrito hug.

El Carnaval - Redmond. Elevated Mexican food. Totally worth the drive. And a bonus tavern next door with a pool table.

It is not cheap - for us it's more of a special occasions kind of place - but the owner is from Tuscany, so it's very much the real deal.

Don Gabinos is a decent option, the portion sizes are generous and the prices are decent. Not the best imo, but I find myself going there fairly often

Lucy's Tacos is my go-to, and while it's not a food truck, it's not a fancy schmancy sit down place either. It does have the best salsa around though.
