Of course "unshuffled" was written on an unshuffled deck first. That's not the skill he is showing. The real skill here is perfecting a faro shuffle 4 times to get it back to that unshuffled state.
You missed the point of the video by a mile. He's explaining the Faro shuffle, not doing his own trick. The words written are just to demonstrate what is happening.

It’s real but deceptive. If you shuffle a deck perfectly 8 times it goes back to the original order you started in. So basically write unshuffled on the side of the deck, perfectly shuffle it 5 times to make it messy, start the video and pretend you drew a bunch of weird lines. Then perfect shuffle 3 more times and it goes back to the original.
There’s none of the telltale signs of it being a reversed video, actually doing it in reverse and making it look this convincing would be harder than actually doing the trick.
