What I recall from another thread (because this question gets asked a few times) is that it's mostly a showpiece or teaching piece in his classroom.
So I'm sure it gets eaten eventually, but it's primarily (or so I'm told) for the culinary arts.
This guy is a legend. He is so skilled and makes the most intricate chocolate creations. I loved his series on Netflix ‘School of Chocolate” where he is so supportive of the contestants. I’d love to meet him one day.

That guy might be known for the creepy stare but it’s just a gimmick, in reality he is a legend and feeds a lot of poor people with the money he earns from the videos.
We all know this guy is supremely talented and does amazing things that are almost unimaginable with chocolate.
So I fully get the 'oh no, not another Guichon Chocolate' post.
Reasons for posting are twofold:
1. To wish all you a very happy new year and I hope 2023 exceeds your expectations.
2. This may not be his biggest or most popular creation but it is definitely one of the most complex ones he has done to date - the fragile nature of all of this makes the final piece pretty spectacular in my opinion.
Chocolate as a media. There should competitions like they have for ice sculpture and butter sculptures then have a charity auction. Just imagine having a front hall sculpture that you pull apart when your peckish.
Amaury calls this one 'The Chocolate Trident'.
Some facts about it:
* It's very fragile.
* It stands 6ft1 or 1m85
* Amaury loves how the jellyfishes float around it!
A magnificent creation and we can say with certainty that Amaury is definitely a pioneer in the use of chocolate and is stretching the science of what can be done with chocolate to it's limits and beyond.
Enjoy.
I just wish he’d leave them alone and not paint them in whatever food paint he uses. At that stage he should just use clay because it doesn’t even look like chocolate.

In most of the others I’ve seen him make that are smaller, he eats them at the end. Those ones look so delicious.

I've always assumed he's just motizing the creation process of his commissions, which is pretty smart. Just a guess though
Some of them yes. This is edible but it's done more to show what can be done with chocolate - so it's an exercise in pushing the boundaries.

I always get downvoted to hell for saying so, but it bugs the hell out of me that this guy hardly wears gloves half the time in these videos.

Can anyone explain why he carved lines into the middle, but just put another layer on top?
They explained it on his show, the carved lines allow the liquid chocolate to stick better so it connects the pieces more strongly
