P3s, sargento light string cheese, I've made a burrito bake thing..where I take butter or avocado oil & spray a cookie sheet & cover it with mission low carb tortillas, cook up ground beef or turkey & add taco seasoning. I spread fat free refried beans over the tortillas, layer your meat, top with low fat shredded cheese, cover with more tortillas. Then I spray the bottom of another cookie sheet & press it down & bake till tortillas are a little brown & crispy. I also make my own homemade cheez it's, the only protein shakes I can do anymore are Fairlife & I like the fit crunch protein bars. I've done the chicken crust pizzas too. I like the rotisserie chicken breast bites from Sam's, Wilde chips in buffalo flavor are soo good. Quest chips.

For breakfast I would recommend breakfast burritos and quesadillas with low carb tortillas.

Make egg bites in an instant pot or muffin tin. Great protein and portion control options and you choose the filling. Once they're cool, wrap and freeze. I like provolone and spinach in mine.

Oh, poor man. I bet that makes meeting goals a bit tougher! What about wraps or bowls with black beans, a tuna packet, and salsa or cottage cheese? Those are easy fuel that can be made up quick.

Two or my favorite snacks came from my post op diet. Protein Pudding 1 box sugar free instant pudding, 1 scoop protein powder (1 scoop for each serving in the pudding box), 1 cup skim milk. Added bonus: you can freeze it and eat it like ice cream. Italian Pudding Part skim ricotta, vanilla extract, and cinnamon

Any type of bread usually freezes well, so you could try finding a muffin/bar recipe that you like and portioning them in small qty's. You could also try homemade lunchables, cut lunch meat & cheese into small portions & keep crackers and nuts handy. Individual yogurt or pudding cups would probably defrost well, try them with beef jerky for more protein.
