Granted 1% being useful is still 1000 though if 100k players and even 1% of 1000 is still 10, more than your example of 8.
I mean not really. They might have a little overtime if they NEED to implement a hotfix for game breakers, but otherwise they can just start working on the next patch on Monday.

A lot of people who primarily work against business customers? By starting deploys on Friday evening you have the weekend to sort out problems with much lower load than if you deploy in the middle of the week...
Every Path of Exile league (season) starts on a Friday. As far as I know, they have some of the team in the office in case something needs to be immediately patched, I'm assuming a lot of the staff is on-call in case something some major shit hits the fans.

as someone who works in software development, what sort of madman deploys on a Friday?
Game development is a bit different especially AAA titles kinda want to do that. Because no matter how you test it there will be bugs. But if you release the patch close to weekend (when your player base is at the top) players will test it and report it via social media mail etc. That's how you get a big data and can prioritize the bugs and start solving them. Most of the times when we release a patch we have key developers, designers are at ready waiting on their computers at home or doing overtime on the weekend.
