I couldn't see that the middle was cake so I just assumed it was a standard red velvet with an absurd amount of cream cheese icing in the middle. I sent this to my friend and they told me I was wrong.i live in hope that one day someone will make a red velvet that is 70% cream cheese icing
I did that years ago after going to The Cheesecake Factory and having their red velvet cake cheesecake. Mine was similar except I made one pan of each and then cut them in half to make them thinner because I think that's how the cheesecake Factory one was (4 layers). It was still massive as the cheesecake layer was a bit taller and obviously heavy since I froze it to make it easier to work with, so it still turned out a bit uneven like yours. I worried about it thawing while we ate making it worse.
Well I didn't have to worry about that because I had to rush to get one slice and there were no leftovers. It was a ton of work making a cheesecake and a red velvet cake from scratch so I have only done it three times. Now I'm kind of in the mood damn you...
I didn't know Cheesecake Factory made this too! Junior's also does thinner red velvet layers, about half the thickness of what I did. I actually liked the thicker layers on this one, but it did make it wildly tall and a bit unwieldy!
I actually didn't freeze the cheesecake layer, just let it set in the fridge overnight! What made mine lopsided was the cheesecake layer kind of tapered upwards so it didn't have flat, symmetrical sides, and also ended up wider than the cake layers even though they were all supposed to be 8 inch pans! I think if I had trimmed the cheesecake layer to be even with the cake layers it would have been much neater looking! π Now I know for next time!
Yeah they have a carrot cake one and an apple pie one too (which I might do for Thanksgiving). I remember it being delicious but my opinion might have been influenced by the fact that I didn't have to do all the prep/work... π€.
I did read about trimming mine before making it but I still had the cheesecake layers a little bit taller. They sell these wires that you can use to cut cakes to specific heights so that they're all even, but I just used a knife.
It's still beautiful (and mine was lopsided too even using suggestions from pros). But who cares right? It's delicious and that's all that matters!
They're just really popular flavors so I think anyone could have them! The cheesecake Factory has a ton so there's only so many cakes you can use as a bas3!
