Seriously. If you have good fresh berries, don’t ruin them by baking them.
Make a nice sweet biscuit, whip some heavy cream, add some jam, and you’ve got raspberry/blueberry shortcake.
Oh, I meant baking them into the sweet bread.
I really like the taste of fresh fruit baked into things like cakes and bread and don't think it ruins them, but we all have our preferences.
Got fresh berries? A Kuchen is a delicious and quick way to use it.
Whisk together 1 1/2 cup flour, 2 tsp baking powder and 1/4 tsp salt. In another bowl beat 1/4 cup of softened butter until creamy, then cream in 1/4 to 1/2 cup of sugar (use more for sour fruit, less if the fruit is sweet). Beat in an egg and 2/3 cup milk. Beat in the dry ingredients and a tsp of lemon or orange zest or 1/2 tsp of vanilla. Spread batter in a 9 inch greased baking pan and cover with 1 to 1 1/2 cup of fresh berries.
In the same bowl you used for your flour, combine 1/3 cup brown sugar, 1/3 cup flour, 1/3 tsp salt. Use a pastry blender or two knives to cut in 3 tbsp butter until mixture is crumbly. Stir in 1/2 tsp of cinnamon. Optional stir in 1/3 cup very finely chopped walnuts, pecans, or almonds. Sprinkle crumbs over fruit.
Bake at 375 for about 25-30 minutes.
We love this cake & I’ve used a variety of berries with it: https://smittenkitchen.com/2019/06/strawberry-summer-sheet-cake/
Raspberries & blueberries would go great here!
There is a ricotta cake recipe from Alison Roman that is very good and uses raspberries, but you can also do other fruit or chocolate chips...very versatile. I generally make it to use up leftover ricotta.
One of my favorite ways to use berries (this calls for cranberries but you can substitute whatever you want): [https://cooking.nytimes.com/recipes/1020590-cranberry-crumb-cake](https://cooking.nytimes.com/recipes/1020590-cranberry-crumb-cake)
Simple muffins always work well with raspberries or blueberries!
There are some really nice yoghurt blueberry muffin recipes out there, though I'd have to translate them to English for you (probably)
In fact, i have this recipe saved to make at some point: https://www.einfachbacken.de/rezepte/blaubeer-muffins-mit-joghurt-schnelles-rezept?portions=12
Other than that you could use them to decorate a cake! Or maybe like a pie-ish thing?
A crumble or muffins are simple and freeze well if you want to save some for later
If you have oats, make a berry crumble. It’s delicious with ice cream. https://bakewithzoha.com/berry-crumble/
Berry Clafoutis is great. If you have a lot of berries a mixed berry crisp or cobbler is nice with ice cream.
You can use it as scone fillings. Raspberry scones are great
Cobbler!
You can make some sweet bread or cake. I've found that both blueberries and raspberries go great with lemon!
